Memorial Day. Mrs. Bailey's
sister and husband. Mr. and

Hot Springs and Malvern.

A: Cooking methods are un-
doubtedly the most critical ele-
ments in determining the final
tenderness of a meat serving.
Assuming that the method of
cooking is the same, there are
still several variables influ-
encing tenderness. Age of the
animal at the time of slaughter
is a major factor, with a notice-
able decrease in tenderness at
advanced maturity (animals
over three years of age). Other
factors will be mostly up to the
individual packer. Aging and
curing usually increase the ten-
derness of the meat as do the
addition of special enzymes.
Three common enzymes used
in meat processing are Brome-
lin. Ficin and Papain. What
the three have in common is the
fact they are all derived from
fruit . . . Bromelin from pine-
apple. Ficin from figs and
Papain from Papaya.

OPEN HOUSE and
BAKE SALE
Another big event at the
Service Center is planned for
Friday of this week when an
open house and bake sale will
be held. The office will be
open from 9 a. m. until 4 p. m.
Friends of the Center are
asked to donate baked goods
to be sold during the day and
to bring them to the Center at
302 Clay Street.
The primary service of the
Center is a referral and
information center for elderly,
at which they may secure
information and help in many
ways. There is no charge for
this service. Also the Center
hopes to be able to offer life
services to home-bound people
including telephone re-as-
surance. visitors, shoppers
help, homemaker help, handy-
man help, counsel ing. trans-
portation when needed, visit-
ing nurses and social oppor-
tunities. Mr. McCleskey said.

Ms. Margo Spraggins and
Mr. Harvey McCarty of
Pleasant Haven Nursing
Home. Nocona, were among
twenty-eight students who
recently received certificates
from Cooke County College in
a new program which gives
special training in medication
administration for nurses
aides.
The program was offered
through special guidelines
established by the Texas State
Department of Health. Nurs-
ing and Convalescent Homes
Division. Instructor for the
special course was Mrs.
Dorothy Nieman. R. N. of
Gainesville. '’The medication
aide does not assume
responsibility for administer-
ing medications" However."
she continued, "the medica-
tion aide will assist the floor
nurse in improving services to
the patient by having
personnel who arc cognizant of
the usages and effects of
medications. By having more
personnel capable of giving
routine medications, the
licensed nurse should have
more time to devote to other
facets of patient care."

Whitten, of 306 Fannin St.,
who died Saturday morning at
Horizon Manor Nursing
Home, were at 2:30 p. m.
Monday at Church of The
Brethern. Rev. Wilmer Leh-
man. pastor, officiated.
Born Aug. 3, 1906 at Cliff.
Okla., she came to Nocona
with her parents in 1916. She
was married Sept. 4, 1940 to
Lee (Nick) Whitten in Nocona.
She had been a member of
Church of The Brethern since
1918. Her husband preceded
her in death in 1958.
Survivors include two sis-
ters. Miss Jewell Brickey and
Mrs. Kate Roper. both of
Nocona; and one brother,
Harmon Brickey, Hallsville.
Tex.
Interment was in Nocona
Cemetery under direction of
Scott Bros.
Pall bearers were Raymond
Molsbee. Jake McCarty. Lee
Priddy. J. H. Hensley, Donald
Boutwell and O. T. Molsbee.

The Senior Citizens Service
Center for Montague County,
located at 302 Clay Street in
Nocona, was formally opened
Monday morning with Mayor
E. J. Johnson cutting the
ribbon. Chamber of Commerce
Manager Weldon Cowan
began the ceremony with a
welcome to the crowd and
Mayor Johnson also spoke a
few words of commendation to
those responsible for the
project. The Center has been
named "The Carpenter Shop”
- alluding to Jesus of Nazereth.

lor's degree from Midwestern
University in recent com-
mencement exercises in Wich-
ita Falls.
They arc Janis Carol
Thomas, daughter of Mr. and
Mrs. Bill Thomas of Nocona,
and Libby Fenoglio Webb,
daughter of Mr. and Mrs.
Melvin E. Fenoglio of
Montague. Both received the
bachelor of science in
education degree.
Mrs. Webb plans to teach in
the Wichita Falls area. Her
husband, Cecil Webb, is a
student at Midwestern while
working at Johnson and
Johnson.
