Creme Cheese Cake Shirley
Knight served me. Not only did
I get that piece, I got the whole
thing! She said she thought the
other employees at the Leader
might enjoy it. and was she ever
right; it was gone in one day.
Giving a cake to a lady from
the newspaper is typical of Shir-
ley; she is a giver and a caretaker.
As a matter of fact, this high-
energy lady is a childcare pro-
vider, keeps an immaculate
house, cleans other people’s
houses, cooks and cans all the
time, takes care of her and her
mother-in-law’s yard, and her
teenage daughter's needs. Whew!
Keeping kids is a snap, she
said. (Trust me, would he no
snap for me.) She is well orga-
nized with the kids. ITicy play
outside whenever possible and
go down for two-hour naps.
Someone once asked her how
she could keep kids and have
such a clean house, and her
answer was that she works from
daylight to dark and goe4 with a
bottle of Windcx in her hand
24/7.
When she told me all the
things she does and then said she
cleans houses in her spare time, I
about fainted. What spare time?

because of Shirley. Furthermore,
she said she also cooks and
hakes for them just because she
loves it.
Somehow or another, Shirley
makes time for husband Jerry.
She told me they met when she
was working at Howard’s Depart-
ment Store in Sulphur Springs.
“He came in several times and
finally got up enough courage to
talk to me. He said I looked
familiar, and he really meant it
because he had met my sister,
and we look a lot alike,” she said.
Jerry noticed that she wasn’t
wearing a wedding ring and
finally called and asked her out.
She added with a grin, “He asked
if I danced, and I said ‘no.’ He
then asked if I drank, and I said
‘no.’ Finally he asked il I ate, and
I said ‘yes.’ so we went out to
cat" The couple has a blended
family, and 18-year-old daughter
Kristi is still at home with them.
On lop of all the work she
docs, she loves to fish with Jerry.
She said they fish I-akc Fork, and
when I asked if she bailed her
own hook, she answered. “Yeah.
I put on worms and stink bail."
The couple often has fish fries,
and one will take place at their
church Chapel Hill baptist
Church in the Bonanza commu-
nity - about the time this article
goes to print. The couple some-
times fishes with neighbors Bill
and Betty Potts
Furthermore, Shirley said she
loves all her neighbors, including
Mary Bishop and Mary Dough-

eriy. Jerry raises a big garden,
and just about all the neighbors
around there have gardens. She
said if something doesn’t grow
well in one person’s garden, the
other neighbors share. Shirley
docs the canning and pickling,
and I could see colorful jars of
canned goods placed in her spot-
less kitchen.
Apparently Shirley spends a
lot of time in that kitchen
because she said she loves to
cook. Frying out new recipes is
fun for her. and if she doesn’t
like them, she just changes
things to suit her own taste.
There arc big lunches at her
house every Sunday, and on the
second Sunday of every month,
the energetic lady cooks for her
church. Where does she get all
that energy?
I asked what Jerry thought
about her high energy, and she
laughingly responded that he
might say she was high strung
instead of high energy. It
sounded to me like he stays just
about as busy as she docs. Jerry
sells health and life insurance,
plays in a band for senior citizen
dances in Daingcrfteld and at a
jamboree in Ml. Pleasant, and
raises the big garden. Shirley
also praised him by saying, “He
can fix anything."
However, Shirley added, “We’re
not alike. He's into music play-
ing, and I’m into home and yard.
But when I have a bad day, Jerry
stays calm and lets me go with
the (low. I do the same for him.
It’s a give and lake cilualion and
keeps arguments down.”
Well. I certainly didn’t argue
when Shirley offered me that
cake. Okay, okay, I need to con-
fess that I didn't take the remain-
der of the cake to the Leader
office; I only took half. Shirley, it
was just too good, and my hus-
band and I made il last for sev-
eral days. We even took the last
two pieces on a trip we made to
the slate championship fiddlin'
contest in Hallettsx il!e. Texas.

3 slices bacon, cooked crisp and

Italian Cream Cake
1 stick margarine
1/2 c. Crisco
2 c. sugar
5 egg yolks
2 c. flour
1 tsp soda
1 c. buttermilk
I tsp vanilla
3/4 c. coconut
3/4 c. chopped pecans
5 egg whites, beaten stiff
Cream margarine. Crisco and sugar
Add egg yolks; beat Add soda in flour
and add alternately with milk to short-
ening mixture Add coconut, pecans
and egg whiles Bake at 325 degrees in
greased and floured round cake pans
(three layers) about 25 minutes
Cream Cheese Frosting
1 8-oz. pkg cream cheese,
softened
I stick margarine
1 pkg (32 oz.) powdered sugar
1 tsp. vanilla
3/4 c. chopped pecans
1/2 c. coconut
dash of milk
Beat cream cheese and margarine;
add sugar and vanilla. Mix in pecans
and coconut Add dash of milk until
spreading consistency
King Ranch Chicken
5 large chicken breasts (bone in
and skin on)
1 large onion, chopped
I 10-oz. can cream of chicken
soup
1 10-oz can cream of mushroom
soup
I can Kotel tomatoes
1 12-oz. pkg. shredded cheddar
cheese
I large pkg flour tortillas
Boil chicken Skin and debone and
cut into small chunks. Set aside I to I-
1/2 cups chicken broth Chop onion
and saute in a tablespoon of butter.
Add soups, onion and Rotel tomatoes
to chicken broth
In a 9x13-inch dish, cut tortillas up
and line bottom of dish with 1/2 of the
tortillas Spread 1/2 chopped chicken
and part of chicken broth mixture and
sprinkle with cheese Repeat layers
ending with cheese Cook in oven at
350 degrees for about 30 minutes.
(You may also wait and add the top
layer of cheese the last 10 minutes of
cooking time.)

8-oz pkg cream cheese
stick margarine
.Add all ingredients in crock pot and
cook for about 3 hours Stir occasion-
ally
Vermicelli Salad
1 15-oz pkg vermicelli pasta
I Tbs Accent seasoning
1 Tbs. Lawerv’s seasoning salt
3 Tbs lemon juice
4 Tbs Wesson oil
1 c. celery diced
1 c. green peppers, diced
3/4 c. chopped onions
1 2-oz jar pimentos
I 6 oz can sliced black olives
I to 1-1/2 c. real mayonnaise
Cook vermicelli; drain and add
Accent seasoning salt, lemon juice and
oil Let set ovemttfit in refrigerator
The next day add remaining ingredi-
ents Mix in mayonnaise and put in
serving dish Cover and put back in
refrigerator until ready to serve (very
good salad for hot days)

TOPS TX #1244 met in regu-
lar session on May 13. The meet-
ing was called to order by leader
Betty Gothard. The devotional
was given by Lori Wilson and
was titled “The Weathered Old
Barn.”
We all said the TOPS pledge
and sang the TOPS song.
Linda Franklin called roll with
nine weighing in. Mildred
Broiles was TOPS best loser.
The money can was held over.
Lori Wilson read the minutes.
TOPS Open House Picnic is
June 7 at the Emory City Park
from 10:00 a.m. to 2:00 p.m.
Come join the fun. Come see
why we are TOPS. See if TOPS
is for you. The picnic will be
cancelled if it rains.
Joan Lomax gave the program
titled “Tips to Avoid Overeating,
Improve Digestion,” and “The
Power of Positive Pressure.” We
closed with our Helping Hands
pledge and sang the Goodnight
song.
We meet every Tuesday night
at the Emory Baptist Church in
the fellowship hall. We weigh in
from 6:00 to 7:00 and meet from
7:00 to 8:00 p.m.
