Okay..so tomorrow is
May 31..already the last
day of May and Saturday
officially begins June!
These past five months
have just flown by. As the
old saying goes, ‘the older
you get, the faster time
flies’! Although with area
schools having holidays
last weekend, lots of folks
headed out of town to
enjoy their three and four
day Memorial Day
weekend which was
celebrated on Monday,
May 27. The official
Memorial Day is today,
May 30th.
Did you know that June
1st is the 152nd day of the
year (153rd in leap years)
in the Gregorian calendar.
There are 213 days
remaining until the end of
the year. Santa is checking
out his list already!
Our recipes this week are
quick and easy because
everyone is busy with ball
games, getting ready for
graduation, planning
vacations and the ending of
school functions! So take
some time for yourself and
plan a picnic for the family
even if it is just in the back

Oven Fried Chicken
1-1/2 pounds chicken
breast (boneless-skinless)
2 cups crushed potato chips
1/3 cup melted butter
1/2 teaspoon pepper
1/2 teaspoon salt
1 teaspoon parsley
1 tablespoon Italian
seasoning
dash of garlic salt
Preheat oven to 350
degrees F (175 degrees C).
Mix all ingredients except
chicken and butter in a
small bowl. In a separate
medium size bowl dip
chicken into butter then roll
in bowl of seasonings.
Make sure to coat well.
Place in shallow baking
pan. Bake for 1 hour or
until tender.
Easy Fried Chicken
1 cup breadcrumbs
1/4 cup chopped fresh basil
1 cup buttermilk
1/2 cup flour
4 chicken breast cutlets
Salt and pepper
1/4 cup olive oil
Set up dredging stations:
a shallow pan with flour, a
second pan with
buttermilk, and a third with
breadcrumbs and 2
tablespoons basil. Sprinkle
chicken with salt and
pepper on both sides. Then
dredge each chicken piece
in flour, dip in buttermilk,
then finally dredge again in
basil breadcrumbs. Pour oil
into a large skillet and place
over medium-high heat.
Cook chicken in hot oil for
3 minutes, then flip and
cook for 2 more minutes or
until no longer pink in the
middle.
Slow Cooker Rib
Sandwiches
1 large onion-chopped
2 pounds boneless country-
style pork ribs
1/2 cup ketchup
1/4 cup plum sauce
1/4 cup chili sauce
2 tablespoons brown sugar
1 teaspoon celery seed
1 teaspoon garlic powder
1 teaspoon liquid smoke
1/2 teaspoon ground
allspice
8 kaiser rolls-split
Combine onions and ribs
in a 3-quart slow cooker.
Top with ketchup, plum
sauce or chili sauce, sugar,
celery seed, garlic powder,
liquid smoke, and allspice.
Stir to incorporate. Cook
on Low for about 7 hours,
then shred the ribs and cook
for another 15 minutes.
Spoon the shredded meat
onto the kaiser rolls to
serve.
Crunchy Oven Fried
Chicken Wings
20 chicken wings,
disjointed-tips removed
2 cups buttermilk
2 tablespoons hot sauce
1 teaspoon onion powder
1 teaspoon garlic powder
1 teaspoon salt
1 teaspoon pepper
3 cups corn flake crumbs
1/2 cup flour
1/2 cup yellow corn meal
salt
pepper
1 cup honey
1 tablespoon chili flakes
Cut up wings, and
discard tips. Combine
buttermilk, hot sauce, onion
powder, garlic powder, salt,
and pepper in a large bowl.
Add the wings to the
buttermilk mixture, cover
and refrigerate for 12 to 24
hours (the buttermilk
tenderizes, flavors and gives
the “fat” the wings will need
to hold the coating and “fry”
in the oven). Preheat oven
to 400 degrees F (200
degrees C). Mix the corn
flake crumbs, flour, and
com meal in a large bowl;
season with salt and pepper.
Take wings from buttermilk
and shake off excess.
Dredge in breading,
pressing the coating into the
wings. Place on greased
sheet pans. Spray tops of
wings with non-stick spray.
Bake in the preheated oven
until brown and very crispy,
30 to 40 minutes. While
chicken is cooking, heat
honey and chili flakes in a
small saucepan over low
heat. Honey will get thin
and hot. When chicken
comes out of the oven, plate
and pour chili honey sauce
all over the wings. Now you
will have a big pile of hot,
crunchy, spicy, sticky
wings.
Grilled Potato Salad
5 red or yellow finn
potatoes
3 eggs-boiled and chopped
1 cup chopped celery
1/2 cup chopped onion
1/2 cup sweet pickle relish
1/4 teaspoon garlic salt
1/4 teaspoon celery salt
1 tablespoon prepared
mustard
Ground black pepper to
taste
1/4 cup mayonnaise
Preheat grill to 450
degrees F. Place potatoes
on foil lengths and wrap up
loosely. Grill for 40
minutes with the lid
closed. Remove from heat,
unwrap, and dice. Toss all
ingredients together and
refrigerate for 30 minutes
to chill.
Baked or Grilled Jalapeno
Poppers
6 slices bacon-diced fine-
browned crisp-drained
1 1/2 cups (6 ounces)
finely shredded cheddar
cheese
8 ounces cream cheese
2 teaspoons New Mexico
chili powder
1/2 teaspoon dried
Mexican oregano
1/4 teaspoon freshly
ground cumin
25 jalapeno chiles-cut in
half lengthwise-seeds and
veins removed
3 eggs
2 1/2 Tablespoons milk
2-3 cups bread cmmbs
Preheat the oven to
325F, cover 2 rimmed
baking sheets with
aluminum foil and coat
them with shortening -OR-
If you have the grill space,
set your grill up of medium
indirect heat...and soak a
couple handfuls of
mesquite chips if you want
a little added smoky flavor.
In a large mixing bowl, stir
together the bacon pieces,
cheddar cheese, cream
cheese, chili powder,
oregano and cumin. Spoon
this mixture into each
jalapeno half. In a medium
mixing bowl, beat together
the eggs and milk. Place
enough bread crumbs in a
4 cup plastic container to
coat the peppers. Place 4
or 5 peppers at a time into
the egg mixture and coat
them thoroughly. Move the
peppers from the egg
mixture to bread crumbs.
Cover and gently shake to
coat. If you are baking
them in the oven, place the
coated peppers onto the
prepared baking sheets and
bake for 30 minutes. If you
are roasting them on the
grill, add the soaked
mesquite chips to the fire
(if you’re using them) and
roast them with the lid
down for about 30
minutes, checking them
frequently to prevent
burning.

I’m sixty-six and some of
my parts have been
discontinued. When the
orthopedic doctor told me I
needed a hip replacement, I
envisioned him removing it,
fixing it, and then replacing
it. After realizing he would
EXCHANGE my hip for an
artificial one, I wondered
who in the world would go
to the Hip Bank and choose
mine. In a poor stab at
humor, I asked the surgeon
if he would keep the hip and
replace the rest of me.
Now that I think back, the
operating room
conversation I overheard
was a preview of things to
come: ‘Sterile, schmerile
the floor’s clean, right?’
They probably followed the
10-second rule, rather than
the five-second rule. It was
a germ orgy and I was
tagged. (If I had been a
Golden Retriever, they
would have taken more
precautions.)
A few days after my
release, I began another
eight-day stay for a hospital-
born infection. I might as
well have rested my open
mouth on a public handrail
or turned a doorknob with
my teeth.
Some people say that hip
replacement surgery is a
piece of cake. I remember
when I made a cake from
scratch and accidentally left
out the sweetener. If that’s
the case, it WAS a piece of
cake.
My hip is 11 weeks old
now. When does the surgical
site stop being an incision
and start being a scar? It’s
curved and could make a
cartoon clickety-clack track
for the Orange Blossom
Special. Viewing it from my
vantage point above, it looks
like someone took a bite out
of Loop 12.
There isn’t a design of
undies that accommodates
the 7-inch half circle that
crosses the elastic line. One
friend suggested I wear a
thong during the sensitive
healing process. When I
figured out that she wasn’t
talking about a flip-flop or
thinging a thong, I replied,
“If a thong could hook over
my shoulders, I’d be good to
go. But ... it might not be
that easy TO go.”
My granddaughters (age
four, seven, and eight) had
never seen an incision, so I

shocking than when my
five-year-old grandson
walked in on me in the
bathroom. He ran down the
hall and told his brother,
“Mimi wears BIG ol’
panties!” I can sympathize
with his trauma—I walked
in on my grandmother in the
bathroom. She looked like
a bloodhound in a shower
cap.
When I showed my
incision/scar to my
granddaughters, one buried
her face in a throw pillow
while another grabbed her
throat and stuck out her
tongue.
We’re still looking for the
third one.
