A senate committee on nutrition has concluded three days of
heard on food safety. And the committee was told, among other things,
that many food dyes are a fraud on consumers and may even be a health
hazard. A scientist said the use of artificial coloring in foods has
jumped from 250 thousand pounds in 1940 to more than four million
pounds last year. A biologist said bakers used yellow dye kn in
something called egg bread to make it look like it contains more egg
yolk than it really does. And he said gray-colored hotgogs are
sometimes dyed red on the outside and pink on the inside to make themmore appealing and to mask the high fat content.
