A cake of ice has more possibilities than meets the
eye. This is the word from a couple of Dallas chefs,
Freeman Matatall and Joe Gomez, who not only are
experts, but, also, masters of the art of
ice sculpturing. All this, as a lot of chefs will/
tell you, is not as easy as it looks.
MED. MAN CHIPPING
Matatall is the executive chef at the Dallas country
club and president of the Dallas Chapter of the
Texas Culinary Society. The group meets once a
month to pick up a few tricks of the trade.
MED. GUY WORKING
Gomez, who takes care of the ntmenus in the
executive dining room of the First National Bank,
begins work on a bust of ]Iercules.
MED. OTHER GUY'S ICE
Matatall chips away on his block of ice which begins
to take the shape of a swan. Six-pronged ice picks
are used to fashion a rough outline of the subject.I
