Women of the Tom Bean
community are trying to or-
ganize a women’s auxiliary of
the Tom Beam Volunteer Fire
Department in an effort to
draw more support for the
organization.
Among the goals is raising
money for better department
facilities.
A meeting will be held to-
night (Thursday) at 7 p.m. at
the community center.
Meanwhile, the five-cent in-
crease in the key fire insur-
ance rate, ordered by the state
last October, has gone into
effect. The increase is from 47
to 52 cents per $100 valuation.
Fire department officials said
that attendance at meetings is
still not what it should be, and
the rate will go much higher if
attendance continues to lag.
Blending Mexican food
and entertainment ideas can
make a simple, inexpensive
meal into a fiesta affair. The
secret, according to Waring,
is in color, spice and play-
fulness, to remind us that
spring is just around the
corner.
South-of-the-border decor
is a study in contrasts. Mexi-
cans use bright yellow dishes
and deck the table with
electric blue paper flowers.
They add shiny tin ware,
pottery mugs, papier-mache
animals and wooden spoons
to make mealtime fun. Here
is a recipe from the Land of
Eternal Spring to give the
dinner table a new glow.
Blender Caramel Flan
Preheat oven to 350°.
3/4 cup sugar
4 eggs
1/4 cup sugar
11/2 cups milk
1 tsp. vanilla extract
1 tsp. ground nutmeg,
or 1/2 tsp. cinnamon

' O&SN. • 'J
In a heavy skillet melt
the 3/4 cup sugar on low
heat, stirring constantly.
When it has caramellized
(turned a golden brown),
pour at once into four 8-oz.
custard cups, dividing equal-
ly between each.
In blender container,
blend eggs and 1/4 cup sugar
on medium speed. Add milk,
vanilla, nutmeg, and blend
on medium speed until well
blended. Pour mixture into
custard cups, and set the
cups into a 9 1/2 x 11” pie
pan. Pour hot water into
the pie pan, around the
cups, about halfway up the
sides. Make sure ho water
spills into the custard. Place
in 350° oven, bake for 45
minutes. A knife inserted
in center of custard should
come out clean when done.
Cool. Serve in cups, or
unmold onto plate or des-
sert glass and pour sauce
over custard. Serves 4.
