Grits Move Into White House
Grits Go To Washington:
According to all reports the
menus in the White House are
undergoing a shocking
transition. Rice, grits, black-
eyed peas and collards we
know all about, but is
Washington society ready for
and aware of these dainty
delights of southern cooking?
Watch for the new recipes
coming from the food editors
of the big city newspapers. J
suppose it will be an
education for us to find the
numerous glamorous ways
our southern * foods can be
prepared. Wonder what
they’ll do with cracklin’bread
besides bake and fry it?
Anyway, to get in on the
ground floor, I’ll offer a few
new glamour ways with
grits! __ -
Grits Souffle
1 c. cooked grits
3 tbsp. hot milk
2 tbsp. finely chopped onion
l2 tsp. salt
3 egg yolks
f/2 c. grated Cheddar cheese
3 egg whites, stiffly beaten
Combine grits, milk, onions
and salt in medium-sized
bowl. Beat egg yolks until
thick and lemon colored. Stir
egg yolks and cheese into
grits mixture. Fold in egg
whites.
Pour into ungreased 1-qt.
casserole or souffle dish. Set
in baking pan. Pour boiling
water around dish to a depth
of 1-inch. Bake in preheated
moderate oven (350 degrees)
about 1 hour. Serve
immediately. Yield: 6
servings ■'
Spicy Banana Fritters
2 c. cooled cooked grits
2*4 c. cornilake crumbs
\'z c. confectioners’ sugar
1 tbsp. grated orange or lime
peel
1 tsp. vanilla
l4 tsp. cinnamon
16 slices banana, cut
slantwise (1/3-inch slices)

1 tbsp. vegetable oil
Rum Sauce
i'2 c. granulated sugar
4 tsp. corn starch
dash salt
1 c. wafer
2 tbsp. butter or margarine
2 tbsp. light rum
For fritters, mash grits
with fork. Add % c.. of the
corn flake crumbs,
confectioners’ sugar, orange
peel, vanilla and cinnamon;
combine thoroughly. Shape
around banana slices to form
16 fingerlike croquettes. Roll
in remaining IM2 c. corn flake
cnimbs. Beat together egg
and oil. Dip fritters into egg
mixture. Roll again in
crumbs Fry in hot deep fat
(375 degrees) about 3 minutes
or until golden brown. Drain
on absorbent paper. Keep
warir.
For sauce, combine sugar,
cornstarch and salt in small
saucepan. Slowly stir in the
water. Cook until thickened
and clear, stirring
constantly. Remove from
heat; stir in butter and rum.
To serve; Place 2 fritters
on each serving plate.
Sprinkle with sifted
confectioners "sugar, ;.f
desired. Pour about 2
tablespoons rum. sauce over
each serving Serve
immediately. Yield: 8
servings
Creole Shrimp in
Grits Ring
Grits Ring:
l1/) c. enriched white hominy
grits
5 c. boiling water
IV4 tsp. salt
Creole Shrimp
h2 c. chopped onion
V2 c. chopped green pepper
x,2 c. chopped celery
2 tbsp. butter or margarine
1a c. all-purpose flour
2 c. tomato juice
1 clove garlic, minced
1 tsp. salt
1 tbsp. sugar
2 c. cooked cleaned shrimp
For Ring, slowly stir grits
into boiling salted water;
cover and cook slowly 25 to 30
minutes, stirring frequently.
Pour into greased 5-cup ring
mold; let stand at room
temperature about 25
minutes. Unmold onto plate;
fill center with creole shrimp.
For creole shrimp, cook
onions, green pepper, and
celery in butter until tender.
Stir in flour. Gradually add
tomato juice, stirring
constantly until thickened.
Add garlic salt and sugar;
mix well. Add shrimp;
simmer about 10 minutes.
Makes 6 servings.
NOTE: If you prefer to use
quick cooking grits, decrease
water to 4 cups. Cook
uncovered V-h. to 5 mintites,
stirring occasionally
