PEACH PIE
3-4 C. sliced fresh peaches
1 C. sugar
Pinch salt
1 well beaten egg
1 T. flour
2 T. butter
1 tsp. cinnamon
2 recipes pie pastry
Combine peaches, sugar, salt, egg, flour, butter and cinnamon. Pour
this mixture into a prepared 6 1/2 x 10-inch rectangular dish or a
10-inch piepan that is lined with pastry. Roll out second recipe for
pastry and cut it in strips for the top of the pie. Bake at 400 degrees F.
for about 30 minutes.
Note: In order to keep peaches from turning brown while preparing
the pie, soak in lemon juice or ascorbic acid.
My family and I have been
in the house market for the
last few months. We’ve
been concentrating on older
homes, hoping to find one to
move and renovate. I
suppose this family interest
has taught us a lot. Probably
the most important lesson
has been an increased
awareness of building
materials -- their origin,
their use (or misuse), and
their value (in pieces or
nailed together). Some types
of building material seem to
mellow and age very well,
maintaining much of their
original strength and beauty
Other types simply get old,
maintaining their cheapness
and weaknesses to the
bitter, peeling, crumbling
end. Of course, you may find
the two types of material
nailed together on the same
wall, and there your valua-
tion problems begin.
Now, I haven’t gone
through all this to talk about
my house-finding misadven-
tures. After all, I am an avid
student of human behavior,
so there must be something
else I can learn here. How
very striking is the parallel
between building material
types used in houses and
those used in people! We
can study how a person is
put together and learn much
about his past, understand
much about his present, and
predict much about his
future. What quality of
building materials do you
observe in your mirror? Is
the structure strong, with
heavy timbers supporting
the important parts? Is there
a lot of paint covering up
past misfortunes or mis-
takes? Is there a lot of
“termite” damage under
the floorings? Do rain and
wind have easy access to the
inner parts? How about
windows? Are there many or
few? Can you see out? In?
I try to tell my teenage
friends about the importance
of careful selection of
“Building materials”; for
those materials become a
permanent part of the struc-
ture. The occupant and his
neighbors will have to look
at those materials for many
years. We adults, having
lived in our houses for vary-
ing numbers of years, must
become increasingly more
satisfied with our houses as
time goes by for we seem to
become less and less in-
terested in maintenance,
upkeep, and remodeling.

further at maintenance and
upkeep on old, well-built
houses.

Patrol
Report
Sgt. Charles Carey, Area
Supervisor for Grayson and
Cooke Counties with the
Texas Highway Patrol,
reports that in Grayson
County for the month of July
40 motor vehicle traffic
accidents were reported,
with 14 of them being injury
accidents with 17 injuries, 26
property damage accidents
and no fatal accidents.

The Dallas Cowboys, work-
ing to lay the foundation for
another successful season,
have been having twice-daily
workouts since July 30 at
their California Lutheran
College training camp in
Thousand Oaks, Calif.
Coach Tom Landry sends
his team into action for the
first time this year Saturday
night, Aug. 14, in the pre-
season opener when the
Buffalo Bills visit Texas
Stadium for the 35th annual
Salesman ship Club benefit
game. The annual intra-
squad game was held Aug.

Landry, beginning his 23rd
season as the only head
coach in Cowboys history,
had led his squad to the
NFC Championship Game
the past two seasons. In
attempting to repeat as NFC
East champions and return
to the Super Bowl for an
unprecedented sixth time,
the Cowboys will have to
meet the challenge of re-
placing two veteran defense
starters who have retired,
outside linebacker D.D.
Lewis and strong safety
Charlie Waters.
“This is a rebuilding sea-
son,” Landry says. “We’re
rebuilding the defense in
that we need replacements
for two of our key starters,
Lewis and Waters. It’s
always more worrisome re-
placing defensive people
than offensive people be-
cause so much of defense is
recognition. And experience
is the only way to learn to
recognize the plays. We’ll
suffer from inexperience.”
Offensively, Landry expects
to field a powerful, seasoned
unit led by quarterback
Danny White and running
back Tony Dorsett.
