Coconut Pie! Smoothly Superb!
Discovered South of the border! This richly thick, deliciously
spicy, coconut pie was brought back across the border in recipe
form . . . and now everyone can enjoy it. It’s excellent fare served
with whipped cream, your favorite whipped topping, or a scoop of
vanilla ice cream.
This is a pie to serve often—as a delectable, fairly hearty dessert
after a soup and salad meal ... as a "different" accompaniment
for steaming cups of hot coffee ... or as an exciting substitute for
a birthday cake.
Spicy Coconut Pie
1-1/3 cups (about)
coconut
unbaked 9-inch pie shell
tablespoons butter
cup granulated sugar
eggs, beaten
cup dark corn syrup

cinnamon
1 teaspoon ground nutmeg
1 teaspoon vanilla
1 teaspoon rum extract
Whipped cream, prepared
dessert topping, or
vanilla ice cream
Flaked coconut (optional)
Sprinkle coconut in bottom of unbaked pie shell. Cream together
butter and sugar. Add eggs and beat well. Add remaining ingredi-
ents and blend well; then pour over coconut in pie shell. Bake in
moderate oven (350°F.) 45 minutes. Serve with "crescents” of
whipped cream, sprinkled with additional flaked coconut. Makes 6
to 8 servings.
