The secret: let the orange stand
;ih scalding hot water for about'
three minutes before peeling. This
enhances, fragrance and juiciness
and' makes the orange easier to
peel. j
Another part of the waiter's
secret — a very sharp knife. Be-
ginning at the stem end cut the
peel, away In a continuing spiral
not remove the.white Inner por-
tiqnv_which clings naturally to the
“meat'*," for this is rich in vitamins
and. minerals. ?:'"7
Put oranges in lunch boxes. You
can make it easier to" unzip the
peel if you score the peel with a
knife id the kitchen. Merely cut
through the 'peel, not into the
“meat’’, so the'marks reSemble
those on the outstiije of a basket
ball. Thus, prepared, the orange
will remain fresh but still be
ready fior immediate eating.
Other fruits on this week’s
market includes grapefruit (most-
ly Texas crown pinks), apples
bananas, grapes, and pears
