AARPTo Meet
The Mathis AARP chapter will
have an ice cream social following
their business meeting Monday,
Sept. 3. The business meeting is
scheduled for 6:30 p.m. at the Mathis
Junior High cafeteria.
Dominoes, Progressive 42 and
Skip-Bo will be played during the
social.
Mrs. Janet Brokaw returned home
Monday. She has been visiting her
.niece in Grapevine.
Mrs. Viola Wilson went to San An-
tonio Saturday. Her daughter and
husband were initiated into the
Eastern Star.
Willis Bunton had a streak of hard
luck recently: A dead mesquite tree
split and fell on his truck, causing a
broken windshield and many dents
in the body, and his dog was run
over, but the vet sent her home.
Mrs. Mildred Fagan of Galveston,
sister of Vivian Smith, came in Sun-
day. She is visiting her mother, Mrs.
Sophie Broughton, in Riverside
Hospital.
Douglas Brown returned home
Monday from Douglas, Mo. He has
been working and staying with his
aunt.
No, Bud Adams, owner of the
Houston Oilers, is not my brother,
but he is my second cousin — Alice
Adams, nee Lea.
Janet Dittlinger is home after a 10-
day trip to Montana.
Dr. and Mrs. E.V. Ruhnke visited
with his mother in San Antonio.
Betty Benoit starts her members
in the Exercise Class early — her
granddaughter Angelage, 13 weeks
old, started Monday. Her sister, An-
nie Beth, started to kindergarten.

The Dieringer Family Reunion
was held Sunday, Aug. 12, at the
Cuero VFW Center. Ninety adults
and 13 children were in attendance.
From this area, A.R. and Eliva Dier-
inger and Olga Kenne, and Ruby and
Jim Warren from the lake area at-
tended.

Two Orange Grove students were
recent recipients of endowed
scholarships from Texas Lutheran
College in Seguin.
Charles D. Fuhrken, an English
major, is the recipient of the Milton
and Adela Lindemann Endowed
Scholarship.
Molly K. Hartman, an elementary
education and psychology major, is
the recipient of the Odie Pederson
Endowed Scholarship.

Receives Degree
Juan C. Paiz of Mathis received
his associate degree in banking and
finance during summer commence-
ment exercises at Del Mar College
last weekend.
Some 270 students received
diplomas during the commence-
ment. They were addressed by
Olympic wheelchair athlete Kevin
Saunders.

grams to an enrollment of almost
1,300.
Rockport Fiesta
This Saturday
The Third Annual Rockport Fiesta
En La Playa will be held on Satur-
day, Sept. 1 from 10 a.m. to 8 p.m.
and Sunday, Sept. 2 from noon to 6
p.m.
Activities include live music, hot
tamale eating contests, jalapeno
eating contests, a carnival and aits
and crafts.

last Monday with Edna Matting of
Odem, her granddaughter, Debbie,
and family, and a friend from Cor-
pus Christi also enjoyed her birth-
day dinner at noon.

to leave Sept. 1 to come to visit

Rodney Henk of Schulenberg, who
was in the bad wreck, finally got to
go home last Tuesday from Her-
man’s Hospital in Houston after five
weeks and two days. The family is so
thankful for all the prayers and con-
cern people offered.

FRIED SHRIMP-APRICOT SAUCE
1% cups all-purpose flour
1T. paprika
11. white pepper
% t. garlic powder
% t. Italian seasoning
1 (12 oz.) can beer
2 lbs. medium-size fresh shrimp,
peeled and deveined
Vegetable oil
Apricot sauce (recipe follows)
Combine flour, paprika, pepper,
garlic powder, Italian seasoning,
and beer in a medium bowl; stir un-
til smooth. Set aside for 30 minutes.
Dip shrimp in batter, and fry in hot
oil (375°) until golden. Serve with
apricot sauce. Yield: 6 to 8 servings.
Apricot Sauce:
1 cup apricot preserves
1 (4 oz.) jar diced pimiento, drain-
ed
2% T. vinegar
Combine all ingredients in a
saucepan. Bring to a boil over
medium heat; reduce heat. Simmer
3 minutes. Cover; chill 2 hours.
Yield: 1% cups.
CORNBREADSALAD
1 (8%-oz.) package cornbread mix

% cup milk
4 medium tomatoes, peeled and
chopped
1 green pepper, chopped
1 medium onion, chopped
% cup chopped sweet pickles
9 slices bacon, cooked and crumbl-
ed
1 cup mayonnaise
% cup sweet pickle juice
Combine cornbread mix, egg, and
milk; stir well. Spoon cornbread
mixture into a greased 8-inch square
pan; bake at 400° for 15 to 20
minutes. Cool and crumble; set
aside. Combine tomatoes, green
pepper, onion, pickles and bacon;
toss gently. Combine mayonnaise
and pickle juice; stir well, and set
aside. Layer half each of cornbread,
tomato mixture, and mayonnaise
mixture in a large glass bowl.
Repeat layers. Cover and chill 2

CHILE-CHEESE CORNBREAD
3 eggs, slightly beaten
1 (17 oz.) can cream-style com
1 (4 oz. ) can chopped green chiles,
drained
% cup mayonnaise
% cup diced onion
2 cups (8 ozs.) shredded Cheddar
cheese
2 cups buttermilk
3 cups self-rising commeal mix
Combine eggs, corn, chiles,
mayonnaise, onion, cheese, and but-
termilk in a large bowl; stir to blend.
Add commeal mix, stirring just un-
til moistened. Pour into a greased
13x9x2-inch pan. Bake at 375° for 40
to 45 minutes or until golden. Yield:
18 to 20 servings.
SAUCY CHICKEN BREASTS
2 T. butter or margarine
4 chicken breast halves, skinned
% cup chopped onion
% cup chopped green pepper
1 cup sliced mushrooms
1 (1.3 oz.) package golden onion
soup mix or (1.25 oz.) package onion
soup mix
iy4 cups water
y4 cup white wine Worcestershire
sauce
1T. cornstarch
3 T. water
Melt the butter in a large skillet.
Add chicken, and brown on both
sides. Remove chicken from skillet,
reserving drippings in skillet.. Add
chopped onion, green pepper, and
mushrooms to skillet; saute’ until
crisp-tender. Return chicken to
skillet. Combine soup mix, iy4 cup
water, and Worcestershire sauce in
a small bowl. Pour over chicken.
Cover, reduce heat, and simmer 20
minutes or until chicken is tender.
Remove chicken to a serving plat-
ter. Combine cornstarch and 3
tablespoons water; add to sauce.
Return to boil; boil 1 minute. Serve
sauce over chicken. Yield: 4 serv-
ings.
