A generation ago the Knolle family
started a modest dairy herd in South
Texas and a monumental task; to im-
prove the Jersey breed and convince
milk producers and milk users that
milk from Jersey cows is the world’s
finest.
Today, as the result of persistent ef-
fort on the part of the breeders of the
fine Jersey cattle, who pioneered the
extensive research, testing and scienti-
fic comparisons, nationally respected
food experts agree that NUTRITION-
AL VALUE is the most important sin-
gle factor in judging the quality and
real worth of natural milk. It is no
longer true that all milk can be said
to be “alike.”
This, added to the well established
fact that milk is nature’s most nearly
perfect food, points conclusively to All-
Jersey as being the one milk that na-
ture perfected positively finer than all
others.
Thus, Jersey breeders can be said to
have accomplished a feat that years
ago would have been judged impos-
sible: definitely establishing a real
difference in natural milk.
Today . . . All-Jersey Milk ... in

... is being introduced in the Rio
Grande Valley. Knolle Jersey Farms
has produced this fine milk for 30
years; known for its quality and finer,

certified to be nutritionally superior
by National All-Jersey, Inc., guaran-
teed 100% Jersey Milk by the Texas

In the beginning, Knolle confidence
set high standards: and now, after a
full generation of pioneering, the users

state and national health authorities

In fact, it was proven that All-Jer-
sey contains MORE of the EXTRAS,
more of the essential food elements,
than any other natural milk. This
means the families using All-Jersey
Milk receive all these extra energy
units at no extra cost.
These scientific studies proved a con-
tention of advanced Jersey dairymen
and breeders who have always stated
that natural Jersey Milk contains more
of the essential food and body build-
ing elements than any other natural
milk.
Now, Jersey dairymen, through
state and national cooperative effort,
are pledged to produce a guaranteed
All-Jersey Milk and continue to sup-
port scientific study in scope never be-
fore attempted.
To date, results of these continuing
Jersey tests for quality, purity, flavor
and food value more than prove to all

Historically, as evidenced during the
era of the glass bottles, people judged
milk by the visible amount of “cream”
shown. Then homogenization, which
distributes the cream content evenly
through the milk, removed this visible
guide without changing the cream con-
tent.
In a statement printed in an agri-
cultural publication, a researcher said
“the time appears ripe for re-empha-
sizing in an aggressive way that the
value of milk is THE SUM OF ITS
INDIVIDUAL PARTS, and that the
non-fat components have an even more
unique value than the fat itself.”
This report further stated
milks from different breeds differ in
comparison even though their fat per-
centages may be identical.”
