NEW YORK, Dec. 23 .-A. a co«
ctructive *tep to help the recovery of
business and industry, the’ New York
Federal lie serve has reduced its re-
discount rate to 2 per cent, the lowest
in the history of the system.
The action, cutting'the loaning rate
to member banks from 2 1-2 per cen^,
which has been in effect since June
it, was taken at a prolonged session
of the board of directors.
While it took the financial district
by surprise, it was received as fur-
ther evidence that the federal reserve
bank plans to continue into 1931 its
easy money policy upon which it em-
barked after the stock market crash
in the fall of 1929. The rate has fall-
en from 6 per cent in little more than
a year.

If you studied Physics at school,
you may remember the law which
states that "to every action there is
an equal and opposite re-action.” And,
ah, me! Ain’t it the truth? We all
scut ter about like mad before the
holiday feast, performing gigantic
culinary feats, only to be left after the
feast is over with a magnifieant disin-
clination ever to cook agin. Of,.
course, this mood passes, as practical-
ly all moods do. lnit it makes life
pleasanter if you humor it while it's
with you, and base a subsequent meal
or two on the left-overs.
Here are a few of my favorite re-
cipes for using left-over turkey. They
may easily be varied to suit the con-
tents of your refrigerator.
Turkey Pilaf
Cut up trukey—cold—two cups or
so.
3 e boiled rice.
1 green pepper.
1 pimiento.
1 onion.
Turkey gravy.
Chop the vegetables fine and saute
them in butter in a frying pan for
eight to ten minutes, keeping on low
heat and the cover on the pan. Then
mix the sauted vegetables with tin-
rice and add the turkey and moisten
well with turkey gravy, l’our into a
buttered baking dish, cover the top
with buttered crumbs and bake in mo-
derate oven until crumbs arc brown.
If you arc short on turkey, or if
you just 'want to* anyway, you can
fill out with sauted mushrooms.
Turkey Roll
1 1-4 c cold minced turkey.
1 t minced onion.
1 t pimiento.
1-8 t paprika.
1-4 t salt.
Turkey gravy.
Rich biscuit dough.
Roll up the discuit dough to about
one-third inch thickness. Mix toget-
her the turkey, onion, pimiento, pap-
rika and salt and moisten with en-
ough turkey gravy to make a thick
paste. Spread the turkey mixture over
the dough, roll up like a jelly roll and
bake in moderate oven until brown.
Serve with turkey gravy.
Turkey And Mushrooms In Pepper
Shells
4 green peppers.
1-2 lb. mushrooms.
2 hard cooked eggs, chopped.
1 c chopped turkey.
1 c soft bread crupibs.
1-2 t salt.
1 t lemon juice.
2 t butter.
Milk.
Wash the peppers, cut in halves
lengthwise, and remove stem and
seeds. Parboil for two minutes. Peel
the mushrooms, slice and fry in the
butter for ten minutes over low heat,
keep pan covered. Add the chopped
eggs, turkey, bread crumbs, salt and
lemon juice. Moisten with milk and
mix well. Fill pepper shells with this
mixture, cover each with buttered
crumbs and place in buttered baking
dish. Bake until crumbs are brown in
a moderate oven.
HINTS
Canned tomato juice is a healthful
drink for the child and an inexpen-
sive substitute for orange juice.
To separate a head of lettuce easily
cut out the stem end anil allow cold
water to run with some force into
the cavity.
ENTRE NOUS CLUB
