"‘Beene's Briefs"
By Bam Beene
Co. ‘Extension fyjent, 0C.E. j
This week I’d like to share with
you one of my favorite holiday
snack recipes. This recipe has
been around a long time and is
always a quick and easy treat.
Cheese Log
1 lb. grated cheddar cheese
1 lb. grated Velveeta cheese
8 oz. cream cheese, softened
1 tsp. garlic salt
3/4 cup finely chopped pecans
Thoroughly blend cheese. Add
garlic salt and pecans and mix
well. Make into 2 rolls about 2"
thick. May be rolled in your
choice of chili powder, parsley
flakes, chopped nuts, or paprika.
Can be stored in waxed paper in
refrigerator for up to two weeks.
This recipe can be adapted to use
of all cheddar cheese if desired
(may need to add about 1 Tbsp.
water to blend) or all Velveeta
cheese. It can also be made into
balls.
Make it ahead and keep in the
refrigerator for unexpected guests
or a quick snack or party. It is
great served with your favorite
crackers or homemade toasted
breadsticks.
Merry Christmas and Happy
New Year to all my friends and
faithful readers.
