.Strawberry short cake and
strawberry ice cream topping is a
year-round delicacy for families
who freeze berries in season. When
carefully selected and properly
frozen strawberries retain their
natural flavor and color.
Frances Reesonover, foods and
nutrition specialist with the Texas
Agriculture Extension 8ervice,
recommends red ripe berries for
freezing. Tbess will hold their
color better than those that ure
almost ripe. Use either dry sugar
or a sugar syrup otherwise an off-
flavor and off-colqr develops very
quickly after the berries thdW. To
prepare strawberries for freezing
wash, drain and cap. Leave them
whole for serving with cream and
cut in half for toppings.
If the sugar method is used,
weigh the berries and allow one
part of sugar, to three or four
parts of berries. Mix the berries
until each Is wdll edited with
sugar. Let the berries stand until
all the sugar is dissolved. Then
p*ok in containers.
For further information on
freezing call by Mrs. Elsie Short’s
office and pick up one of the bul-
letins B-175, Frozen Foods, How
to Freeze—How to Cook.
