I have cloudy
well water. 1 find that if I boil a
kettle full of water, then filter it
through a coffee filter, I have
the clearest water imaginable
with no mineral settlement. I
generally boil about two gallons
of water per day and set it aside
for cooking purposes. This
boiled water is also excellent to
use for canning liquid, when
cloudy water and heavy mineral
content can affect the appear-
ance and flavor of the home-
made canned food.

looking. The cleaners and

way to get these countertops
really clean?

lemon juice on the countertop
and spread it into a thin layer on
the surface. Let it sit a few
minutes, then sprinkle baking
soda liberally over the counter,
scrub vigorously with a plastic
ntesh scrubber, then rinse with
clear water on a sponge or cloth.

Dear Polly — I use a very
simple method to defat chicken
and beef broth. Cool to lukew-
arm, then add enough ice cubes
to cover the top of the broth
surface. The fat in the broth will
immediately cling to the ice
cubes and then you can take out
the ice and the fat to discard.
