Admittedly the name may not
be as appealing in English as in
French or Indian. And children
have long been known to rank
eggplant right up there with
spinach and cauliflower in their
“I won't eat it” category. Nev-
ertheless, eggplant is one of the
most* tasty- and beautiful-
vegatables you can grow in
Texas gardens.
The most popular varieties
today no longer look like eggs.
Most Texas gardeners grow the
large purple types like Black
Beauty.
Eggplants are somewhat dif-
ficult to grow when tempera-
tures are at either extreme. Even
though this vegetable prefers
warm weather, it will stop set-
ting fruit in the heat of summer,
and it can not be started too
early in the spring.
For best results, start egg-

in the 70s before you set trans-
plants into the garden. That will
be in March or April for most

Plant oriental and dwarf vari-
eties 18 inches apart in rows,
leaving 36 inches between each
row. Larger, fruited types need
to be spaced 24 to 30 inches
between each row. Use a level
tablespoon of slow-release fer-
tilizer placed in the hole, one to
two inches below the roots.
Then apply a tablespoon of 12-
24-12 fertilizer per each two
feet of row every two weeks to
keep the plants growing vigor-
ously.
Eggplants are at their best
while the fruit still has a high
gloss, so harvest them anytime
after they reach half their full
size. If the skin develops a dull
look, throw them away.

April 6, 1998. She was bom in
Arkansas City, Kansas on July
23, 1948 to Lige and Ruth
Roberts Vaden. Moving from
Chico, Texas Pat had been a
resident of Panola County for
the past 31 years. She and Bill
Holder were married October
15,1966 in Carthage. Pat was a
member of First Baptist Church
of Carthage.
Survivors include her hus-
band, Bill Holder of Carthage;
daughter, Angie Brumley and
her husband, Philip of Lindale;
two brothers, Glen Roberts of

Renner and her husband, Rus-
sell Renner of Waterloo, Iowa;
two grandchildren, Katrina and
Korey Gonzales of Lindale.
Pallbearers include Frances
Flowers, Bin Rogers, Norvil
Williams, Earl Malone, Louis
Powell and Eddie Turner.
Honorary panbearers were
Jerry Stacy, Paul Ingram, Bob
Wright and Clyde Dickens.
Funeral ’ services were held
Wednesday, April 8,1998 at the
First Baptist Church in Carthage
with Reverend Jerry Bumaman
and Reverend Freddy Mason of-
ficiating.
Burial services were held at
the Odd Fellows Cemetery,
Carthage.
