Spoon Bread
2 cups yellow meal
2 cups boiling water
1 1-2 cups sweet milk
2 teaspoons salt
3 tablespoons butter or mar-
garine
3 large eggs
Sift meal twice and stir in
boiling water. Add butter, salt
and beaten egg whites. Turn in-
to a buttered baking dish. Bake
40 minutes in an oven 425 de-
grees.

Corn Muffins
2 cups yellow corn meal
2 cups buttermilk, more if
needed
2 teaspoons baking powder
1-2 teaspoon soda
1 teaspoon sugar
2 eggs
1-4 cup melted fat
1-2 teaspoon salt
Sift meal with dry ingred-
ients. Add milk and eggs. Beat
with a rotary beater. Have
greased muffins tins very hot.
Add batter to hot rings and
bake in an oven 400 degrees for
25 minutes.

Rolled Corn Crisp
7-8 cup yellow corn meal
1 cup boiling water
2 1-2 tablespoons melted but-
ter or margarine
1-2 teaspoon salt
Celery seed
Add corn meal gradually to
boiling water and when smooth
add butter and salt. Drop from
a spoon on a buttered ’cookie
sheet. Spread thin with spatula
dipped in cold water. Sprinkle
generously with celery seed.
Bake in an oven 350 degrees
until almost brown. Remove
from oven just before browning.
Roll over spatula to form cones.
Return to oven and bake until
delicately browned.
