apples are poor in color and flavor,
and they shrivel after storage.
Over ripe apples are mealy and
poor in flavor. Brown tinted irre-
gular area on surface is called
scald. It is caused by gases given
off by apples during storage. If
slight it affects quality very little.

1 cup brown sugar
2 tablespoons flour

Wash, pare and quarter the ap-
ples. Steam until tender. Combine
the flour and tapioca and pat into
the bottom and sides of an unbak-
ed pie shell. Combine cream, sug-
ar and cinnamon. Dip each apple
section in this cream mixture, then
place in unbaked pastry shell. Af-
ter pie shell is filled, pour remain-
ing cream mixture over apple and
place in a hot oven for 15 min-
utes. Reduce temperature and bake
for 25 minutes.
