Veal Soup Streamlines Mealtime

taught school, and the youngest
daughter, Genelie was a second
grader in my room. Her sisters,

because I visited in their home. They
lived next to the Schults family with
whom I stayed. Marian and her
mother, Mrs. Nellie Obermueller,
were also at the birthday party.
Marian Henkhaus lives in Columbus
now, as does her mother.

A new pork processing plant tn
be opened in San Antonio by a
Mexico City- based company is just
the first of many free trade
opportunities expected to benefit
the state’s farmers and ranchers,
Agriculture Commissioner Rick
Perry said.
The pork plant is one of three
facilities to be established in the
Alamo City by Hemco Packing Inc.
The company’s President Jose
Hernandez Estrella, announced this
month that his company would open
two slaughtering plants and one
meat processing operation.
During a November 2 news
conference at one of the company’s
new facilities, Perry said, “For the
past year, I, and many others, have
said that value- added processing
and free trade are good economic
answers for Texas.
“Today, thanks to Hemco
Packing Inc. and the Hernandez
family, these aren’t just empty
words - instead they’re processing
plants; they’re jobs; they’re new
markets, new opportunities and
hard, cold cash for Texas.”
Hemco’s first plant, to be opened
in about two months, will be at the
former Apache Packing plant at
1717 S. Brazos St. The plant will
slaughter up to 200-250 Texas hogs a
day and have the capacity to
process 3,000 head a day by the end
of its first year. A second
slaughtering plant, the former San
Antonio Packing company at 2000 S.
Laredo St., will process cattle. The
third facility, the former Decker
Plant at 2450 Roosevelt St., will
process hog and cattle carcasses
into cold cuts, smoked meat and
other products.
Most Texas hog farmers must
ship their animals out- of- state to
be slaughtered because Texas has
no large- scale pork processing
plants, but the Hemco plant will
change that. Perry said.

“If the average price paid is $82
per head, that means almost one
quarter of a million dollars per day
will be going back to Texas pork
producers,” Perry said. “Of
course, that’s raw price for raw
product. Just think what this will
mean when we include processed
products, such as retail cuts or
smoked meat."
At least 600 people are expected
to be employed by all three plants.
Hemco, through its parent
company, Industries Sues me,
employs 400 at its Mexico City pork
processing plant and additional
people work at 16 distribution points
throughout Mexico. The company is
the sixth largest operation of its
type in Mexico.
“I’ve been touting free trade and
today, I think people can
understand why," Perry said. “On
October 7, President Bush came to
this city to initialize the North
American Free Trade Agreement
and less than one month later we
are here looking at the first of what
I believe will be many success
stories - success stories built on
exports.
“I’ve said that a strong economic
alliance with our neighbors to the
south will create jobs. Others have
disagreed. But today, the proof is
here. San Antonio is looking at 600
new jobs.
“Free trade creates
opportunities. Statistics bear that
out. During the last six years, U.S.
agricultural exports to Mexico have
doubled to $2.9 billion. And
agriculture specialists at the U.S.
Embassy in Mexico City expect
that figure to jump to $4 billion by
the end of this year. Clearly,
through NAFTA the promise is
bright for even greater progress."

involved; and in 1991, a part- owner
and spokesman for Texas TGV,
former Lt. Governor Ben Barnes,
stated that they could raise the $170
million nine months ahead of
schedule. Now, they once again
have demonstrated their disregard
for the commitments they made to
the Authority and the people of
Texas.
I believe the entire question of
high speed rail should be revisited
by the Texas Legislature next year.

Veal and Vegetable
Soup is convenient
and delicious with
fresh vegetables and
pieces of lean, tender
veal, seasoned with
marjoram and garlic.
Light in calories, too,

Veal for stew — an
economical cut from
the shoulder or leg —
is browned, then sim-
mered with ready-
to-serve canned broth
and seasonings. Good-for-you com,
potatoes and zucchini add color, texture
and flavor.
For extra easy preparation, make the
soup a day or two ahead and refrigerate
covered. Reheat on low to serve. It
makes a wonderful weeknight meal for
the family — just add bread and fresh
fruit.
Veal and Vegetable Soup
Preparation time: 20 minutes
Cooking time: I hour and 10 minutes
1-1/2 pounds veal for stew, cut into
1-inch pieces
2 garlic cloves, crushed
1 tablespoon olive oil
1/2 teaspoon salt
3-1/2 cups water
1 can (13-3/4 ounces) ready-to-
serve beef broth
1 tablespoon chopped fresh
marjoram or 1-1/2 teaspoons
dried maijoram leaves
1/4 teaspoon coarse grind black
pepper
1/2 pound red-skinned potatoes, cut
into |/2-inchcubes(l-3/4cups)
1-1/2 cups com kernels, fresh or frozen
1 small zucchini (3 to 4 ounces)
Toss veal for stew with garlic; set
aside. Heat 2 teaspoons oil in Dutch
oven over medium heat. Brown veal,
half at a time, using remaining oil as
needed. Pour off drippings, if neces-
sary. Season veal with salt. Return
all veal to pan. Add water, broth,
marjoram and pepper. Bring toa boil
Reduce heat to low and simmer cov-
ered 45 minutes. Add potatoes and
com. Continue simmering covered 15
minutes or until veal and vegetables
are tender. .Meanwhile, cut zucchini
in half lengthwise; cut into 14-inch
slices. Add zucchini to pan; continue
cooking covered 5 minutes or until
zucchini is crisp-tender. 6 servings.
