the program’s philosophy has been: Academics and athletics go hand-in-hand. At every level. Pop Warner
Football seeks to develop well-rounded young men and women who learn not only the fundamentals of football
or cheerleading, but also the importance of education. Each team is limited to a certain number of players, and

Student wins state 4-H honor
Amy Terry of Lindale recently
won a $750 scholarship from
Morris Milling Co. and first place
in the State 4-H Food Show fruits
and vegetables category at Texas
4-H Roundup at Texas A&M Uni-
versity.
Miss Terry, daughter of Mr.
and Mrs. Joe Don Terry, received
an award for her Savory Stuffed
Squash.
The recipe is featured below.
SAVORY STUFFED
SQUASH
8 medium squash
2 small onions, chopped
3 small carrots, shredded
1 tablespoon margarine
1 jar (2-ounce) sliced pimento,
drained
3 tablespoons margarine, melted
2 cups herb-seasoned stuffing
mix, divided
1/2 cup sour cream
1/2 teaspoon salt
1/4 teaspoon pepper
Place whole squash in a sauce-
pan with boiling water to cover.
Cook over medium heat 20 min-
utes or until tender. Drain; cool.
Cut a 1/4-inch lengthwise slice
from each squash; scoop out and
reserve pulp, leaving shells intact.
Mash pulp and set aside. Remove
ends of squash. Saute reserve pulp,
onion, and carrots in 1 tablespoon
margarine in a large skillet until
tender. Remove from heat; stir in
pimento, 1 cup stuffing mix, sour
cream, salt, and pepper. Spoon
mixture into shells. Place stuffed
squash in a lightly greased 13x9x2-
inch baking dish. Combine mar-
garine and remaining stuffing mix;
sprinkle evenly over each squash.
Bake at 400 degrees for 10 min-
utes or until thoroughly heated.
Makes 8 servings.

Sandra Spaeth, an English
teacher at Lindale Junior High
School, recently received the
1991 -92 Kinzie Award for Excel-
lence.
As the recipient, Ms. Spaeth
will receive a $500 honorarium
from the Kinzie Foundation.
Dr. Earl Kinzie said Tuesday
that the foundation was estab-
lished to provide scholarships to
deserving students and teachers.
The Kinzie award was designed
to motivate teachers, Kinzie said.
For the past 14 years, it has been
provided to one Lindale teacher
annually.
The recipient is nominated by
his peers, and finally chosen by
administrators.
Mrs. Spaeth began her teach-
ing career in Lindale in 1981, and
is the current chairperson for the
department of language arts at
LJH. She has taught advanced
English, advanced reading, gifted
and talented English and reading,
journalism and creative writing.
She is a member of the Classroom
Teachers’ Association and has
held several offices in the organi-
zation.
She is a sponsor of National
Junior Honor Society and was re-
sponsible for the charter chapter
at LJH. In its second year, the
organization now has 60 mem-
bers.
Mrs. Spaeth is the University
Interscholastic League coordina-
tor at the junior high. She orga-
nized and helped sponsor a recent
academic meet in Lindale, where

local sixth, seventh and eighth
grade students won first-place
plaques, allowing LJH to win
sweepstakes for the event.
Mrs. Spaeth and her husband,
Duane, have two daughters. Mrs.
Spaeth is a graduate of the Uni-
versity of Texas at Tyler. She also
attended Louisiana Tech Univer-
sity.
