Preheat oven to 350. In bowl
combine peanut butter, butter,
brown and white sugars; beat till
creamy. Gradually beat in eggs
and vanilla extract. Blend in floutf
baking powder and salt. Spread
___into greased 13x9x2 inch baking
pan. Sprinkle semi-sweet chocola-
te chips over top. Place in oven 3
min. Remove, run knife thru in
swirls to marbalize. Return to
oven. Bake at 350 degrees for 30
minutes. Cool. Cut into 2”xl”
bars. Makes 48 bars.

350 degree oven in a greased and
floured tube pan.
CHINESE PEPPER STEAK
2 lbs. round or sirloin steak, diced
and browned in 3 tblsp. oil
1 cup chopped green peppers
1 cup chopped red peppers
1 cup chopped celery
Vi med. onion-diced
5 carrots sliced thinly
Saute above with browned meat in
skillet. Pour all of above in 6 quart
pan. Add 4 cups water, 5 beef
boullion cubes, l/i cup soy sauce,
dash of ginger. Cook over med-low
heat until meat and vegetables are
tender. Add: 3 cans bean spouts
(drained) 1 can sliced .water
chestnuts (drained), 1 can fancy
Chinese vegetables (drained)
Thicken mixture with cornstarch.
Serve over cooked, white or brown
rice. Serves 8 people.

Town Living ‘Only Way to Go”
Our Cook of the week, Joan
Bentley, fits the saying, “you can
take the girl out of the country, but
you can’t take the country out of
the girl.”
Born north of Vernon in Hines
Community, Joan lived on a farm
until the family moved to Harrold
in 1947. She grew up with one
brother, Kenneth Hildebrandt,
and even though there was three
years between them they were
very close. She lived in Harrold
until she married David Bentley of
Electra. They lived here for four
years before moving to Dallas
where they spent 12 years. Six
years ago they moved back to
Harrold and built on to her
mothers home. They now live with
her mother, Emma Hildebrandt,
and hope to stay in this area. Joan
says she likes the small town life
much more than the big city.
The Bentley’s have three chil-
dren. Kim, 18, is a freshman at
Texas Tech in Lubbock and she
works at Whites Auto. Kammie is
in the 7th grade in Harrold and is
involved in track. Mark, who is in
the 6th grade, also loves sports.
He favors football and basketball
and has recently shown an interest
in golf. Joan spends a lot of time
with her children and enjoys being
involved in their activities. Se
noted that she, her husband and
children have a very close rela-
tionship.
Joan is a working mother. She is
employed as a loan clerk at Electra
State Bank where she has worked
for three years. While living in
Dallas she spent 10 years working
at the First National Bank of
Dallas, then when they moved
back to Harrold, she commuted,
for three years, to Vernon, where
she worked at Waggoner National
Bank. Her husband, David is
employed by Stevens Engineering
in Wichita Falls.
Besides her family, there are
three other things Joan loves to be
involved in. The Bentley’s attend
Immanuel Lutheran Church in
Harrold where she loves singing
in the choir. She is presently the
corresponding secretary for Xi Tau
Alpha Sorority and is in line for the
presidency next year. She enjoys
being involved in the service
projects the group participates in.
And she also loves to sew. She
doesn’t have the time to sew as
much as she would like to, but
when time avails she does try to
whip something out for her
children or herself.
There is one other thing Joan
says she wishes she had more time
for, and that is cooking. She said
she would spend all day in the
kitchen if she could. She loves to
cook exactly what the family loves
to eat and that includes Chinese
food, lasagna, and lemon pound
cake. She never cooked much
while growing up until age 15,
when she spent the summer with
her aunt and uncle and took care of
their kids. Joan often follows a
recipe if she is making something
special but usually has the family
favorites memorized and often
adds her own touch to original
recipes.

Weekly Menus
Congregate Menus for the citi-
zens who will be eating in the
Annie Powell Senior Citizens
Center next week have been
announced. Meals are served each
day at noon at the center. Menus
are as follows:
FRIDAY-Hamburgers, french
fries, ice cream.
MONDAY-Chicken fried steak,
potatoes, broccoli, peach pie.
TUESDAY-Fish, tator tots, mix-
ed vegetables, orange cake.
WEDNESDAY-Roast beef, pota-
toes. carrots, vanilla pudding.
THURSDAY-Smothered chicken,
nee. green beans, chocolate cake
LEMON CAKE
2 cups flour
2 sticks oleo
2 cups sugar
6 eggs
1 *4 tblsp. lemon extract
3A tsp. vanilla
Put all ingredients in a mixing
bowl and beat for 10 minutes. Do
not underbeat. Bake for 1 hour in

church. Then the attention turns
back to the Collosians. Her
discussion was most interesting.

Mrs.'N.M. Baird, vice-chairman,
presided at the meeting. An
interesting article on Helen Stein-
er Rice and her writings was read
by Mrs. Baird. She writes not as a
writer, but as a friend who has
known you always.
Mrs. Cole received and dedicat-
ed the Fellowship of the Least
Coin.
Missionaries in the North Caro-
lina Presbytery were mentioned by
Mrs; W.P. Slaton. She led in
prayer for these names stated in
the Mission Yearbook of Prayer.
Presbyterial meeting for the
women is to be held in Wichita
Falls on April 19th. Reservations
are to be turned in by April 15th.
