known as ‘barbacoa’?"
It is a traditional Sunday
breakfast dish that dates back
to the era of the Mexican
"vaquero" or cowboy.
"Barba" literally means chin,
or beard, but it is more than
that. It is the head of a cow.
When Mexican ranchers
slaughtered a cow, usually on
a Saturday, they gave the
head to the vaqueros. To cook
•t, they dug a pit, covering the
bottom with stones and
mesquite wood. When the
coals were hot, they lowered
the cow head covered with wet
burlap, then overlaid it with
the sizzling stones and cactus.
After steaming all night, it
was ready for breakfast early
Sunday morning.
Barbacoa is a delicacy still
enjoyed by both Hispanics
and Anglos in Texas. Today it
is prepared in restaurant
kitchens in stainless steel vats.
