Heatherington suggested
using flounder, kingfish or a
similar kind of fish that has
a like texture of white
flakey meat.
First, he said, one cleans
the fish by removing the
guts and gills. The the fish is
soaked in a solution of wa-
ter containing salt, brown
sugar, honey, and lemon.
His instruction* continued
with allowing the fish to
soak overnight. Just before
cooking, he likes to further
season the fish with a pre-
pared seasoning known as
Tex Joy Steak Seasoning,
but he said that Lowery Sea-
son Salt is also good.

going on with Beau Hydricks as
the instructor and will soon see
a drawing class instructed by
Ed Fickett. These two classes

association is offering a variety
of other classes that may spark
your interest.

Eunice Burleigh; creative flow-

ners and flags to be used by the
post.
