To make Mexican Roll-Ups, prepare 14-16 Deluxe Pancakes accord-
ing to the recipe on a package of Pillsbury’s Buttermilk Pancake Mix.
Add 2 extra tablespoons milk to make a batter slightly thinner than
usual. Bake on hot griddle, using about ’A cup batter for each 5-inch
pancake. (For ease in turning, bake one at a time.)
Spread each pancake with ’4 cup meat sauce prepared as directed
below. Roll up like jelly roll, and place in well-greased 13 x 9-inch pan.
Cover with remaining meat sauce; sprinkle with 1 cup shredded cheese.
Bake at 400’F. 10 to 12 minutes or until cheese is melted. Makes 14-16
roll-ups.
