She recalled with disdain some
of the fare offered to her in 1948
when she circled the globe as
“cold” war correspondent for the
small weekly Mesquite. Texas,
newspaper, Dallas County’s oldest.
The Mesquiter, circulation 1,500,
probably was the smallest news-
paper in the world which covered
the Berlin Air Lift and was per-
sonally represented at a confer-
ence with Gen. Lucius Clay dur-
ing that crucial period of Ameri-
can-Russian relations.
She writes a front-page column,
“Circling Around with Corinne
Neal Cook,” which is popular with
friends and neighbors seeking to
keep pace with this Traveling
Texan. And every year she de-
lights her readers with details of a
new, exciting location.
Several of her foreign-flavored
beef recipes, including Brussels
Filet, will be included in the Texas
Beef Council’s collection of Fa-
mous Texans’ Recipe Cookbook,
now in compilation.
Here is how she prepares Brus-
sels Filet: have the butcher split
three-inch thick individual tender-
loin of beef steaks in the center
Insert 14-inch thick aged Ameri-
can cheese (be sure it is aged) and
’A-inch thick cured ham in each,
sprinkle with garlic salt or hide
slivers of garlic buds in crevices
in each and broil until desired de-
gree of donencss. Before broiling,
top each with a pat of butter;
brown and season. Turn them over
and repeat the browning process.
‘‘Don’t cook them too fast,”
warns the traveling chef.

her hobby, she has collected hun-
dreds of interesting foreign
dishes.
Occasionally, she confesses,
chefs are arbitrary. In these cases,
she relies on memory and conjures
up dish after dish in her own
kitchen until the taste satisfies
her.

Undaunted, Mrs. Cook returned
home, purchased the ingredients
and scored a success on her very
first attempt. She even honored
the chef by naming her version
of his delicacy: “BRUSSELS
FILET”.
“I’m not fascinated with Indian
cookery,” she confesses. ‘‘As a
matter of fact, since beef tops
my ‘favorite’ list, 1 find that I
prefer menus from beef-producing
countries like Argentina, New
Zealand, Australia, and of course,
America, most of all.”
