mercials, the average Amer-
ican housewife is obsessed
with keeping her kitchen
clean. But just how clean?
Suppose a health depart-
ment Food and Drug inspec-
tor visited your kitchen.
Would it pass the inspection?
According to the Texas
Department of Health Re-
sources, there’s a good
chance that it would not -
and that might be part of the
reason that the incidence of
food-borne disease, such as
food poisoning, is far more
common in the home than in
public restaurants.
Of course, how clean you
keep your kitchen, and the
sanitary practices you follow

Although the human eye is
still the best method for
locating tornadoes, most
homes are equipped with a
built-in tornado radar: the
home television set.
If properly tuned, it is
believed that a television set
will detect a twister within a
15-20 mile radius.
Known as the Weller
Method, the phenomenon is
named for the Iowa scientist
(Newton Weller) who first
perfected the procedure.
The method is not fool-
proof and therefore should
not be the sole source of
information during bad wea-
ther. The National Weather
Service recommends that
anyone who lives in an area
for which a “tornade watch”
or "tornado warning” has
been issued should keep an
ear on up-to-date weather
bulletins braodcast over
local radio and television
stations.
Weather bulletins are
based on information from
both radar and the phalanx
of trained spotters deployed
around a community when-
ever dangerous weather
threatens.
As a supplement to this
kind of protection, anyone
can apply the Weller Method
by following a few simple
instructions:
First, warm up your tele-
vision set as if you were
going to watch it. The
contrast control should be
tuned to the maximum posi-
tion.?
Turn to Channel 13 and
adjust the brightness control
until the screen is just on the
threshold of black. Then turn
to Channel 2 without making
any new adjustments to the
picture settings. The audio
settings may be adjusted as

take a brief health inspection
of your kitchen.

food you serve your family.

have been running their own
advertising campaigns fea-
turing information about
their service or products.
Nearly every type of busi-
ness is represented in the
campaign.
Participating are more
than two dozen businesses
which believe you’ll find
values in their stores or
offices as good or better than
those found in larger cities.
They urge you to compare
by reading their weekly
messages.
The stores and institutions

“Fish products are easily
digested because they con-
tain little connective tissue.
They are good for diets of
young children and elderly
people, where ease of digest-
ibility is important,” the
specialist added.
She noted that calcium,
iron, iodine, potassium, pho-
sphorus, copper and man-
ganese are minerals found in
fish, and all ai*e essential for
good health.
“Calcium and phosphorus
help maintain strong bones.
Calcium also helps clotting of
blood and regulating of the,
heart beat. Fish containing
small bones, such as salmon,
are good sources of these
minerals.
“Iron is another mineral
present in fish and is needed
by all cells-the red blood
cells in particular. These
cells carry oxygen in the air
through the blood vessels to
all cells in the body. Lack of
iron in the diet makes a
person feel tired and run
down and can lead to
anemia,” she explained.
Seafood is a rich source of
iodine, a mineral often found
lacking in the diet, according
to a nutrition survey. When

for: If you’re in the habit of
sticking fruit juice, beer, or
soda pop cans in an ice cube
container to cool them down

on using the ice for anything
else. In fact, the health
inspector will frown on stor-
ing anything in ice.
There’s one major problem
in almost every kitchen.
When you’re preparing a
complete meal for your
family, what happens if the
meat is done before the
vegetables are ready? Ac-
cording to the health inspec-
tors, youd better keep the
meat hot - no lesfc than 140
degrees Fahrenheit. The
same rule applies to all
cooked foods. If you ever let
cooked food stand for more
than a couple of minutes at
temperatures below 140 de-
grees, you’re not only break-
ing the rules - you’re openly
inviting a serious case of
food poisoning.
If therefe one thing the
average housewife probably
thinks she§ doing right, itfe
washing dishes - especially
if she uses an automatic
dishwasher. Unfortunately,
a health inspector probably
wouldn’t agree. Unless, of
course, she uses a triple sink
for hand washing in three
stages; washing in soapy
water, rinsing in hot water,
and a final sanitizing rinse in
water that has been heated
to 180 degrees or more, or in
a sanitizing chemical. No

“These vitamins help use
energy from food and keep
the nerves and skin in good
