1 onion
1-2 teaspoon pepper-corns
3 tablespoons fat
3 tablespoons flour
Salt
Pepper

Cover lamb bones with cold wa-
ter, add onion, sliced, and pepper-
corns and cook slowly 3 to 4
hours; strain. To 3 tablespoons fat
from pan add flour and when well
browned add 1 1-2 cups of the
lamb stock. Stir until sauce boils,
add seasonings and pimiento cut
in small pieces.

ROLLED STUFFED FLANK

Remove skin from flank steak,

and pepper, spread with stuffing,
roll and tie. Dredge with flour.
Put in a hot oven, 450 degrees
F., until flour begins to brown,
then reduce heat to 300 degrees F.
Add 1 cup hot water, cover closely
and bake 2 to 3 hours or until
tender.

RAISIN GINGERBREAD
2 cups flour
1-2 teaspoon salt
1 1-4 teaspoon soda
2 teaspoon ginger
1-4 teaspoon clove
1 teaspoon cinnamon
1-2 cup molasses
1-2 cup sour milk
1-3 cup shortening
Sift together flour, salt, soda,
and spices. Mix together molasses
and sour milk and add the flour
mixture. Beat well. Add shorten-
ing. Add raisins. Bake in a square
pan in moderate oven (350 de-
grees F.) about 25 minutes,
MINTED STRAWBERRIES
Use large, perfect, whole straw-
berries. Remove hulls and squeeze
over them orange juice to which a
little chopped mint has been ad-
ded. Sprinkle with powdered sugar
and the chill thoroughly. Serve in

LAMB AND PIMIENTO LOAF
3 pounds shoulder of lamb
1 cup stale bread crumbs
1 cup canned tomato
1 egg
3 pimientos
1-4 cup lamb stock
2 1-2 teaspoons salt
Wipe lambs, remove lean meat
and put through food chopper.
Add bread crumbs, tomato, egg
slightly beaten, pimiento chopped,
lamb stock and salt, shape in a
loaf, put in greased shallow pan

GINGER ORANGE CREAM PIE
18 ginger snaps (1 1-8 cups
crumbe); 1 tablespoon sugar; 1-3
cup butter.
Roll snaps fine and mix
sugar and softened butter. Press
mixture firmly against sides and
bottom of buttered pie plate,
building the sides up well (about
1-4 inch above top erf pie plate)
to allow for shrinking. Bake 10
minutes in a hot oven (425 F.h
When cold fill with:
3-4 cup sugar; 1-3 cup flotrr;
1-8 teaspoon salt; 2 eggs; 2 cups
scalded milk; 1 teaspoon vanilla;
2 oranges, cut in small pieces.
Mix sugar, flour, and salt. Add
eggs, slightly beaten and pour
gradually on scalded milk. Cook
fifteen minutes in double boiler,
stirring constantly until thicken-
ed. Cool and add flavoring. Drain
orange pieces, arrange in pie shell
and pour custard over them. Top
with whipped cream and garnish
with crumbs.

Put a scoopful of vanilla ice
cream into a tall glass. Fili the
glass with ice-cold ginger ale and
serve at once.
