Hometown Favorites
Alpha Upsilon Pi chapter of Beta
Sigma Phi met March 17 in the home
of Brenda White, with Nina Bill-
ington serving as eo-hostess.
Following opening rituals, pledge
rituals were held for new member

MACARONI FISH STEW
1 cup thinly sliced celery
4 cup thinly sliced onion
4 cup butter or margarine
1 pound frozen haddock or sole
fillets, partially thawed, cut in cubes
21 salt
1 small garlic, crushed
1 bay leaf
1 can (16-oz.) cut green beans, un-
drained
1 can (16-oz.) sliced carrots, un-
drained
2 cups elbow macaroni (8 ounces)
2 cups milk
Cook celery and onion in butter un-
til crisp-tender. Add fish, salt, garlic
and bay leaf. Drain bean and carrot
liquids into measuring container;
add enough water to measure 6 cups
in all. Stir into fish mixture. Simmer
15 minutes, bring to boil. Gradually
add uncooked macaroni. Boil 10
minutes, stirring occasionally. Add
drained vegetables and milk, heat to
serving temperature. Serve im-
mediately. Serves 4 to 6.
Mr. And Mrs. Claude Plumb
Mr. and Mrs. Claude L. Plumb, formerly of Portland and now living at
Goliad, will be honored with a reception on Saturday in celebration of
their 50th wedding anniversary. The reception will be hosted by the
couple's children, William M. Plumb of Vacaville, Calif., Robert A.
Plumb of Portland, Erin Poplin of Euless and Mary B. West of Corpus
Christi. It will be held in the home of Mr. and Mrs. Fred R. Frati of 104
Sutherland, former neighbors of the couple. The Plumbs were married
on April 1, 1936, at Alton, III.

and Helen Archer, both of Portland,
were presented corsages in honor of
the occasion. Other special guests
were Isaura Slovacek, Debbie Hein
and Kelly Harris, all members of the
wedding party.
BARBECUEDTROUT
6 pan-dressed trout or other pan-
dressed fish, fresh or frozen
% cup soy sauce
4 cup ketchup
2 T lemon juice
2 T salad oil
11 crushed rosemary
Thaw frozen fish. Place in single
layer in shallow baking dish. Com-
bine remaining ingredients, pour
over fish. Let stand 1 hour, turning
once. Remove fish, reserving sauce
for basting. Place fish in single layer
in well-greased hinged wire grill.
Cook about 4 inches from moderate-
ly hot coals for 5 to 8 minutes. Baste
with sauce. Turn. Cook 5 to 8
minutes longer or until fish flakes
easily when tested with fork. Makes
6 servings.
SESAME SHRIMP
14 cup peanut oil, divided
3 T lemon juice
3 T soy sauce
1T honey
141 ground ginger
1 large clove garlic, crushed
1 pound uncooked jumbo shrimp,
shelled and deveined
13 cup toasted sesame seed
Combine 2 tablespoons peanut oil,
lemon juice, soy sauce, honey,
ginger and garlic. Mix well. Stir in
shrimp. Cover and refrigerate two
hours, stirring once or twice. Heat
remaining 2 tablespoons peanut oil
in a skillet over moderate heat. Fry
shrimp 14 to 2 minutes on each side,
or until done. Dip each shrimp in
sesame seed, lightly coating each
side. Place on heated serving plat-
ter. Serve hot. Makes 6 servings.

peeled, deveined and chopped
(about 2 cups)
4 cups shredded cabbage (about 4
medium head)
*4 cup sliced green onions
3/4 cup mayonnaise
*4 cup fresh lemon juice
21 sugar
11 seasoned salt
41 dry mustard
41 Worcestershire sauce
Lt hot pepper sauce
salt, to taste
Boil shrimp; peel, de vein and
chop. Reserve a few whole shrimp
for garnish — refrigerate to cool. In
a bowl, toss together cabbage, chop-
ped shrimp and onions. Set aside. In
another bowl, combine mayonnaise,
lemon juice, sugar, seasoned salt,
dry mustard, Worcestershire sauce
and hot pepper sauce. Pour over
shrimp mixture and toss to coat.
Add salt to taste. Chill until serving
time. Makes 4 cups.

Fund-Raiser 1
The Portland Lions Club will hold
a Mexican food dinner fund-raiser
from 4 to 8 p.m. Saturday, April 19,
at the Community Center.
Cost is $4 per person.
Carry-out plates will be available
also.
Tickets may be purchased at the
door or through any Lions Club
member.

SWEDISH TROUT N’
POTATO CASSEROLE
6 small, whole dressed, fresh or
frozen trout
4 cups southern-style hash brown
potatoes/1 pound, 2 ounces)
14 cup chopped parsley
IT dill weed
2 T melted butter or margarine
Salt, to taste
% cup buttermilk
1 cup whipping cream
Melted butter or margarine
Thaw trout if frozen. Toss potatoes
with parsley, dill weed, butter and
salt. Put potatoes in a buttered 2-
quart baking dish. Combine butter-
milk and whipping cream and pour
over potatoes. Bake in preheated
400-degree oven for 30 minutes.
Season cavity of trout with salt and
arrange on top of potatoes in baking
dish. Brush fish with melted butter
and bake an additional 25-30 minutes
or until fish flakes easily when
tested with a fork. Do not overcook.
Garnish with fresh lemon slices and
fresh dill weed, if desired. Makes 6
servings.
Officers For 1986-87
The ChatWork Club met Wednes-
day, March 19, in the home of Tanis
Schmidt, with Nancy Yuhas
assisting as co-hostess.
Following the group’s social hour,
a travelogue of Jerusalem was
presented by Olga Myles. Billie
Dupree and Carole Breed attended
as guests.
Ruth Handelman reported that the
landscaping project at the original
Portland Library has been com-
pleted and that a rack to display the
quilt made by club members also is

dent; Sue Lenz, recording
secretary; Kathleen Dunlap, cor-
responding secretary; and Karon

Elva Breshears reported that the
Founder’s Day dinner will be held on
Tuesday, April 29, at Sandy Shores
Inn, Corpus Christi Beach.
At Bridal Shower
Gail Harris of Corpus Christi,
bride-elect of Kenny Turner, was
honored with a bridal shower on
Tuesday, March 18, in the Lanai
Room of The Breakers on Corpus
Christi Beach.
Serving as hostesses were Lorene
Howell, May Kollaja, Joyce Little,
Glenda Long, Gay Mayo, Jo Ann
Pitzer, Chobie Stringham and
Claudette White. They presented the
honoree with a piece of her china
selection along with the table center-
piece, an ivy arrangement accented
with blue silk flowers.

Flo Chubbs of Corpus Christi, and
her future mother-in-law and

While browsing in a bookstore
recently, I came across a paper-
bound cookbook entitled, “1001
Recipes from Your Favorite
Hometown Newspaper,” which I im-
mediately decided I had to have in
case of emergency. For some
reason, the book doesn’t list which
newspapers, or I would have includ-
ed them.
Since our area and to the west of
San Patricio County is so rich with a
variety of both saltwater and fresh
seafood, this week’s column will be
devoted to dishes containing fish or
seafood — most of them fairly
unusual.

Gamma Xi Members Plan
Fall Rush, Officer Election
Gamma Xi Chapter of Epsilon
Sigma Alpha held a business
meeting March 6 at the home of Har-
riet Cobaugh.
In officer reports and committee
reports, it was noted that the state
convention will be held May 22-25 at
Dallas.
A nominating committee, headed
by Gayle Ray, will present a slate of
nominations for officers for 1986-87
at the next business meeting. New
board members will be installed
during May.
An auditing committee will be ap-
pointed prior to the new treasurer
taking charge of the books.
A scholarship committee, con-
sisting of Bonnie Harsh, Pat King
and Cobaugh, will review applica-
tions for the Nancy Bittner
Memorial Scholarship, which will be
presented at the annual Gregory-
Portland High School awards
ceremony in May.
Lioness Club Elects
1986-87 Officers
The Portland Lioness Club met
Monday, March 10, in the home of
Sandra Rhame, with Kay Kaigler
acting as co-hostess.
Plans for the upcoming charter
night banquet were discussed, with a
final poll of 29 charter members to
be installed by a candlelight
ceremony.
New business included the deci-
sion that Lioness Club members will
sell chocolate Easter bunnies for the
club’s first charity fund-raiser.
