COFFEE CAKE
2% cups sugar, divided
1 cup shortening
3 eggs
21. vanilla
3% cups flour
41. baking powder
¥41. salt
1 (13 oz.) can evaporated milk
2 ounces pre-melted chocolate or 2
ounces chocolate, divided

DO-AHEAD CARAMEL
ROLLS
2 cups baking mix
% cup cold water
2 T. margarine or butter, softened
¥4 cup packed brown sugar
11. ground cinnamon
¥3 cup packed brown sugar
% cup margarine or butter
¥3 cup pecan halves
Mix baking mix and water until
soft dough forms; beat vigorously 20
strokes. Gently smooth dough into
ball on cloth-covered board
generously floured with baking mix.
Knead 5 times. Roll dough into rec-
tangle, 15x9 inches. Spread rec-
tangle with 2 tablespoons
margarine. Mix ¥2 cup brown sugar
and the cinnamon; sprinkle over
rectangle. Roll up tightly, beginning
at 15-inch side. Pinch edge of dough
into roll to seal well. Wrap securely
in plastic wrap and refrigerate up to
24 hours.
Heat oven to 425 degrees. Place ¥3
cup brown sugar, % cup margarine
and the pecans in round pan, 9x1¥j
inches; heat in oven just until
margarine and brown sugar are
melted, about 3 minutes. Cut roll of
dough into 12 l¥4-inch slices. Place
slices, cut sides down, in pan. Bake
until golden brown, about 15
minutes. Immediately invert on
heatproof serving plate; let pan re-
main a few minutes. Makes 12 rolls.
Note: Rolls can be made and served
immediately; do not refrigerate
dough.

1 (6 oz.) package chocolate bits
Cream 2 cups sugar and shorten-
ing together, with an electric mixer
at medium speed. Add eggs, 1 at a
time, beating well after each addi-
tion. Add vanilla. Combine flour
with baking powder and salt. Add
alternately to batter with milk. Mix
thoroughly. Pour % of batter into
greased and floured tube or bundt
pan. Drizzle 1 ounce melted
chocolate over batter. Combine re-
maining ¥4 cup sugar with cin-
namon. Sprinkle ¥4 sugar-cinnamon
mixture over batter. Sprinkle %
chocolate bits over batter. Marble
well with knife. Top with remaining
batter. Repeat sprinkling with
melted chocolate, sugar, cinnamon
and chocolate chips. Marble. Bake
at 350 degrees for 1 hour. Turn oven
off. Let cake cool in oven. Remove
from pan and wrap in plastic wrap
when cool if desired.

After the excitement of Santa hav-
ing arrived during the night, how
about a light morning meal of
something different.
Usually everyone is so excited
from the presents that they don’t
want to take the time for a big
breakfast. Why not try some make-
ahead dishes so you can spend time
with your family instead of spending
time in the kitchen. Have a happy
holiday.
MAPLE-GLAZED SAUSAGES
2 (8-oz.) packages brown & serve
sausage links
1 cup maple-flavored syrup
% cup firmly packed brown sugar
11. cinnamon
In large skillet, brown sausage
links; drain. In small bowl, combine
syrup, brown sugar and cinnamon;
blend well. Pour over sausages.
Heat thoroughly until sausages are
well coated, stirring gently. 10 serv-
ings.
MAKE-AHEAD EGGNOG
FRENCHTOAST
6 eggs
2 cups half-and-half or milk
¥4 cup sugar
¥41. nutmeg
1¥>1. rum extract
16 to 18 slices firm white or whole
wheat bread
Butter or margarine, melted
Grease two cookie sheets. In
medium bowl, combine eggs, half-
and-half, sugar, nutmeg, vanilla and
rum extract; beat until well blend-
ed. Cut each slice of bread with
decorative cutter, if desired. Dip
each slice of bread in egg mixture;
place on prepared cookie sheets.
Cover lightly with foil; freeze 1 to 2
hours or until completely frozen. To
store, remove from freezer; stack
slices, placing waxed paper
between, and wrap stack in foil.
Return to freezer.
Heat oven to 425 degrees. Remove
bread slices from freezer; brush 1
side with melted butter. Place but-
tered side down on ungreased cookie
sheets. Bake at 425 degrees for 10
minutes. Brush top with butter; turn
buttered side down. Continue to bake
an additional 10 to 15 minutes or un-
til golden brown. 16 to 18 slices.
SAUSAGE, POTATO,
AND CHEESE OMELET
1 lb. bulk breakfast sausage
¥3 cup chopped onion
2 cups slices (¥» inch) peeled
potatoes (about lib.)
1/81. freshly ground pepper
¥2 cup diced Swiss cheese (2 oz.)
5 large eggs
¥2 cup milk
Crumble sausage into 10-inch
nonstick skillet. Cook, stirring occa-
sionally, over medium heat until
lightly browned. Remove sausage
with slotted spoon to medium bowl;
discard all but 1 tablespoon fat.
Stir onion into skillet. Cover and
cook over low heat until onion is
tender, about 5 minutes. Add
potatoes and stir to coat with fat.
Cover and cook over medium-low
heat 6-10 minutes. Turn potatoes
with spatula. Cover and cook until

Wunschel of Brownsville, mother of
the groom, and Marcia Counter of
Portland, mother of the bride. Also,

covich, Dee Ezell, Kay Kaigler, Lin-

Counter, serving her sister as maid
of honor.
Miss Counter, Mrs. Counter and
Mrs. Wunschel were presented cor-
sages of coral rose buds.
She was also honored Sunday,
Dec. 21, with a lingerie shower
hosted by Sherry Burchfield Rose,
formerly of Portland, in San Mar-
cos. Mrs. Rose will be a bridal atten-
dant at the Jan. 3 wedding.
Slayton, Smitty Snodgrass, Helen
Rambo, Dorothy Cole, Phyllis Hayes
and Twila Anderson. Doris Mir-
covich then ended the program with
a Christmas wish to all the
members.
Following the program was the
business meeting presided over by
Shirley Carson. At the conclusion of
the business meeting, the members
joined together in singing the Delta
Kappa Gamma song.

Jim Bob and Kaccee Childress of
Corpus Christi announce the birth of
their daughter, Nicole Danae, born
Tuesday, Dec. 16, 1986, at 2:05 a.m.
at Memorial Hospital.
She weighed 6 pounds, 8 ounces
and measured 19 inches.
Paternal grandparents are Mr.
and Mrs. Benny Childress of
Portland and Mr. and Mrs. Fredric
J. Carlson of Longview.
Paternal great-grandparents are
Mr. and Mrs. John Wiley of Edroy

Holiday At Meeting
Gamma Psi chapter of The Delta
Kappa Gamma Society held its
December meeting in Sinton recent-
ly. Sinton memebers served as the
hostesses.
Showers Fete Counter,
Bride-Elect Of Wunschel
Blayne Ann Counter of Portland,
bride-elect of Curt Wunschel of
Brownsville, was honored with a
miscellaneous shower Saturday,
Dec. 13, at the home of Marcia
Schultz, co-hostess.
Miss Counter’s serving table was
adorned with a lace tablecloth,
featuring a candle arrangement in
the bride’s colors of navy and coral.
The cake was featured with a
miniature bride and groom, wedding
bands and doves accented with the
bride’s chosen colors. The guests
were served refreshments of cake,
punch, coffee, mints and assorted
nuts.
Hostesses were Ann Bishop, Patsy
Armstrong, Marietta Koester,
Shirley Smith and Suzanne Shirley.
Guests attending were Mrs. Nancy
Polderman
Frank and Cathy Polderman of
Portland announce the birth of their
son, Erik Russell, at 10:58 p.m.,
Wednesday, Dec. 17,1986.
Erik weighed 8 pounds, 12 ounces
and measured 21 ¥4 inches.
He joins a brother, Frank Jr., 5.

DEBORAH PHILLIPS
Deborah Phillips, daughter of Bar-
bara and David Phillips of
Portland and a member of the
Gamma Phi Beta Sorority of
Southwest Texas State University,
recently was featured in her
sorority's international magazine,
"The Crescent." Phillips appeared
in the magazine for being named
.SWTSU all-sorority pledge of the
year for 1985-86. She is currently
serving as scholarship chairman
and assistant pledge director for
her sorority and is a sophomore
majoring in marketing with an
overall GPA of 3.25.

Preceding the meeting, the
chapter held a silent auction on craft
items brought by the members.
Following the auction, Program
Chairman Doris Mircovich
presented the Christmas program.
Annette Murphy played her guitar
and sang several Christmas songs in
Spanish. Dee Ezell then presented a
Christmas reading, “Christmas Is.”
After the reading, several members
told about a past Christmas they
especially remembered.
