cake covered with a clear caramel glaze and studded with
whole halves of well toasted almonds. Then when the cake is
cut, they’ll behold two lovely beige-colored layers with a ribbon
of tawny caramel-flavored whipped cream between them, i

filled with finely chopped crunchy toasted almonds.
It’s an easy dessert to serve for —*— ----'— ----
a company dinner because it can
be made well ahead of time. Fur-
thermore, it’s one of those des-
serts that’s substantial, but not
heavy. You know what I mean.
You’ll find, too, that one layer of
this cake makes a very complete
dessert served with whipped cream
alone.

Vienna Caramel ----------

Caramel Syrup for Cake, Filling
and Topping
% cup sugar
3 tbsp hot water
Caramelize the sugar by melting
in a heavy pan over a low heat
until it is a medium brown, stirring
constantly to keep it from burning.
Add the hot water and cook until
the lumps are dissolved and mix-
ture is the consistency of n heavy
syrup. Cool.
