Thorough chilling is necessary if you
want to whip evaporated milk. It must be
chilled to a temperature around 40 de-
grees Fahrenheit. A good method of
chilling it sufficiently is to put the un-
opened can of milk in the freezing tray
or the refrigerator until fine ice crystals
b^gin to form around the edges The un-
opened can may also be chilled by pack-
ing it in ice and salt. —>
