1 tablespoon sugar, salt and pep-
per to taste, 1 green pimiento,
chopped: 2 cups milk, 3 eggs, 1-2
cup shredded cocoanut.
Beat eggs slightly. Combine
with all the other ingredients ex-
cept cocoanut. Turn into deep
baking dish. Sprinkle lightly with
powdered sugar and shredded co-
coanut. Bake in moderate oven
(350 deg. F.) until firm. Serve
piping hot with corn muffins or
baking powder biscuits.

gaiety of New Year’s Eve calls for
moderately sturdy fare just after

Veal Curry with Molasses
(Serves 8)
Two and one-half pounds cook-
ed veal, diced; 1 teaspoon salt, 3
medium sized onions, minced; 6
.stalks celery, minced; 2 apples,
minced; 1-4 cup curry powder,
1-4 teaspoon pepper, 1-2 teaspoon
ginger, 1 pound rice, 1-2 teaspoon
tabasco sauce, 1 tablespoon Wor-
cestershire sauce, 1-2 cup cold
water, 2 egg yolks, well beaten;
2 tablespoons butter, 1-2 cup New
Orleans molasses 2 cups meat
stock.
Saute veal, onions, celery and
pples in frying pan or sauce pan.
Pour in meat stock and stir in
curry powder and simmer for 5
minutes. Add molasses and other
seasonings and meat, and cook for
20 minutes. Pour in the water
adn cook for 5 minutes, stirring
until thickened. When ready to
serve, add egg yolk and beat to
boiling, stirring constantly. Serve
in hot rice ring.
। Condiments: Serve curry with
-chutney, shredded fresh cocoa nut,
chopped peanuts, chopped hard-
cooked egg yolks, chopped cooked
egg whites and chopped crisp ba-
con.

A cup of tea or coffee, or a
glass of milk and a bite of some-
thing sweet during the off hours
of the day will refresh the spirit
after the excitement of the long
holiday. Here are a few easy sug-
gestions.
Small Sponge Cakes
Two egg yolks, 1-3 cup sugar,
grated rind of half a lemon, 2
teaspoons lemon juice, 2 egg
whites, pinch salt, 1-3 cup flour.
Beat egg yolks until thick and
lemony. Add sugar, grated lemon
rind and juice. Continue to beat.
Add salt to egg whites and beat
quntil stiff but not dry. Fold egg
whites into the egg yolk mixture.
Then fold in the sifted flour. Pour
into small fluted paper cup cake
cases and bake about 15 minutes
in moderate oven (350 deg. F.).
Peanut Butter Brownies
Four tablespoons butter, 1-4 cup
peanut butter, 2 eggs, 1 cup sugar,
1-2 cup sifted flour, 1-2 teaspoon
baking powder, 1-4 teaspoon salt,
2 squares unsweetened chocolate.
Cream butter and peanut butter
together and add sugar. Add beat-
en eggs, melted chocolate, and
flour which has been sifted with
baking powder and salt. Spread
in a shallow pan which has been
lined with buttered paper. Bake
in moderate oven (.350 deg. F.) for
about '30 minutes. Turn out and
cut into squares.

Spread the untoasted side with a
mixture of creamed butter, brown
sugar and a little cinnamon. Set
under broiler until the mixture is
hot and bubbly, Serve very hot.
The toast works better if cut itno
small strips before being spread
with the butter mixture.
