Two active pre-schoolers keep Cindy Clatt of Allen quite busy so
she has had to discover easy family meals like her Tator Tot
Casserole and Apricot Bars but when she has time to prepare fan-
cier dishes for her family or company, she relies on her Mediterra-
nean Casserole, Hot Fruit Salad, Port and Spinach Pie or her Taco
Pie Dip.
Cindy, husband Bob, daughter Jasmyne, 3, and son Tyler, 2, mov-
ed to Allen six months ago from Lubbock. Cindy works at Richard-
son Heights Baptist Church where she is active in the choir and in
outreach leaders.
Cindy who, along with Bob, often entertains friends has found the
Pork and Spinach Pie ‘‘great to serve company as an elegant meal.
It is a verv unique, dressy and classy dish,” she says.
