Although its name may not sound very appetizing, yogurt is
refreshing and nourishing. It is believed to have excellent
medicinal qualities in keeping the intestinal system healthy and
promoting clear healthy skin.
Yogurt originated in the Balkans many centuries ago. The peo-
ple of this region claim the consumption of yogurt daily accounts
for their hardiness and longevity.
Stored in the coldest part of the refrigerator, yogurt will keep 2 to 3 C. raw spinach, washed and well drained
two to three days. It is a good source of vitamin B and calcium, 6 radishes, thinly sliced
and a 3% ounce serving made from whole milk is only 62 calories. I T. minced onion
Let the yogurt stand at room temperature for three to four French dressing; toss lightly. Add yogurt and marjoram to cheese;
hours. Heat milk to 120 °F. on a candy thermometer. Do not blend. Arrange six mounds of cheese mixture on spinach. Garnish
overheat. Cool to 90oF. Add the yogurt and mix thoroughly. Turn each mound with olive slices. Makes six servings,
into a bowl or four individual containers. Do not stir or move con-
tainers. Cover and keep barely lukewarm until a curd has formed.
Store in refrigerator. Makes 1 quart. g-===

Pound meat until very thin. Sprinkle meat with rosemary and let
stand for two hours. Mix eggs with onion, pineapple, cinnamon,
crumbs and enough yogurt to make a thick mixture. Put some of
the filling on each cutlet. Roll up meat and skewer with toothpicks
or fasten with string. Brown veal in butter on all sides. Add
bouillon and tomatoes. Cover and bake in preheated slow oven
(300°F.) for two hours. Thicken liquid if desired. Makes four to six
servings.
