Another of th recipes is for Cir-
cassian Chicken:
CIRCASSIAN CHICKEN
1 chicken
3 quarto of water
1 large onion
1 carrot
1 bunch parsley
1 teaspoon salt
pepper
3 cups shelled walnuts
1 tablespoon paprika
3 small slices white bread
Place chicken in pot containing
three quarto of water and add on-
ion, carrot, parsley, salt and pep-
per. Bring to boil and skim foam
off top. Cover-and cook for two
hours. (If pressure cooker is used,
reduce water and cooking time
accordingly.) When chicken is ten-
der, remove from pot and allow
to cool. (Save stock.) When cool
take off skin and bones and cut
chicken into small pieces. Put wal-
nuts through grinder twice, then
add paprika. Preu nuts and pap-
rika between double layers of
cheesecloth to get about 2 table-
spoons of red oil to be set aside
for garnishing. This to merely for
decorating.
Soak bread in chicken stock,
squeeze dry and add to ground

“An Adventure Into Turkish Cui-
sine” was enjoyed by the Foreign
Food and Customs Group of
AAUW at their meeting recently
in the home of Mrs. Henry H.
Blagg. 424 Texas St.
Hostesses were Mrs. Blagg, Miss
- Nannie Sanders and Mrs. Griffin
—• B. Huey. The Turkish colors of
red and white were used in decor-
ations.
Mrs. Howard C. Key was guect
speaker. She spent last year in
Turkey where her husband. Dr.
Key, was a Fulbright lecturer.
The menu included yaprak dol-
• masi (stuffed grape leaves); pat-
lijan dolmasi (stuffed egg plant),
cheeses, pickled eggs, olives, pis-
tachio auto, cherkes tavugu (Cir-
cassian chicken); paliv (rice, pat
lijan salatasi (eggplant salad),
pickled walruts, rose petal jam,
poppy seedrolls, muhallebi (rose
pudding) mint water, turkish cof-
fee. baklava (pastry) and turkish
s—paste.
One of the recipes from the
menu to given below:
—“ EGGPLANT SALAD -nr
4 large eggplants (long type)
3-8 cup olive oil
salt
1 lemon
1 tablespoon vinegar
10 black olives
1 medium onion
* Hl graan peppers .■
2 medium tomatoes
—— Place whole eggplants on spit
or hold with tongs overgasfame
and turn while cooking. Allow skin
to turn black so as to give a smoky
flavor to the salad. Skin eggplants
while still hot (skin will come off
.easily). Place in bowl with olive
oil and sprinkle with salt and lem-
- on. Mash with a potato masher.
Add vinegar and beat into a smooth
mixture. Mold into form of egg-
plant and serve on platter decor-
ated with black olives, onion*Elic-
it used to be that punch-mak-
ing was a very complicated bus-
iness, adhering strictly to the rule
that it should contain at least five
different ingredients that were
in turn sweet, bitter, strong, bot
and cold
In getting away from tradition
we serve punch with almost any
beverage we choose, so long as it
tastes good and looks beautiful.
