Green apples, the hard variety

many a tummy ache when eaten
by young orchard raiders, are get-
ting plentiful now, ready to be
made into delicious sauce, tarts
and pies.
If you believe statistics you know*
that apple pie is the most popular
pie in the country. It is the one
most oftOn ordered in restaurants,
the one that can be really called
a man’s dessert. And you’ll prob-
ably be having plenty of calls for
it at your house
Because of this, and because
it’s smart to make maximum use
of fruits in season, you’ll want
several apple recipes at hand so
you can serve this popular fruit
in a variety of interesting ways.
One of them will certainly be
this quick apple pie from test
kitchens. It takes only minutes to
make and you need not roll a pie
crust. Simply fill an 8 inch pie
plate with apple sauce, then sprink-
le over the top the crust mixture
to which you’ve added cinnamon,
brown sugar and other flavorful
ingredients. It’s a real quickie,
and so good.
SPEEDY APPLE PIE
1 cup sifted flour
% teaspoon salt
1-3 cup shortening
% cup brown sugar, packed
M teaspoon cinnamon
% teaspoon nutmeg
2 cups applesauce
1 tablespoon lemon jnice
Ice cream or regular cream
Start heating oven at 375 de-
grees F. Rub 8 inch pie plate with
shortening. Cut shortening and
salt into sifted flour with pastry
blender or two knives until the
pieces are the size of small peas.
Then add brown sugar, cinna-
mon and nutmeg, and mix well.
Fill pie plate with apple sauce,
add lemon juice, and spread the
crumbly mixture over it. Bake for

turkeys weigh only 4 to 9 pounds
when they're just right for eating,
so they make a perfect choice for
the average family. To determine
the size to buy, allow about a
pound, dressed weight, per person
for each serving.
You may purchase these turkeys
fresh-iced or quick-frozen, fully
dressed, ready to stuff, truss and
pop into the oven. To stuff these
birds in a hurry, use the new al-
ready prepared herb-seasoned stuf-
fing found in cellophane packages
in your grocery shelf.
Because these birds have all
white feathers, there are no trou-
blesome dark pin feathers to re-
move. The semi-covered country
bake method keeps the meat moist
and protects the very thin skin of
this special breed of birds from
becoming dry and hard.
Cranberry Slaw
Adds Flavor,

The striking red color and tan-
gy goodness of fresh cranberries
combine with orange juice, green
grapes and minced vegetables for
a perfectly wonderful fruited cole
slaw.
1 cup chopped fresh cranber-
ries
% cup sugar
2 cups finely shredded cab-
bage
% cup orange juice
2 tablespoons finely diced cel-
ery
2 tablespoons finely diced green
pepper
1 cup halved green grapes
2 tablespoons mayonnaise
(blended with a little whip-
ped cream for extra smooth-
neu)
Mix cranberries and sugar. Mois-
ten cabbage with orange juice. Add
sugared cranberries. celery, green
pepper and grapes to cabbage.
Toss lightly with mayonnaise. Chill.
Makes 4 servings.

To country bake your turkey,
place the already stuffed bird
breast up on a rack in a roasting
pan. Brush with % cup melted
butter or mgargarine. Brown in
a preheated (500 degree F.) oven
for 20 minutes or until lightly
browned. Baste turkey with the
drippings.
Cover with the lid of your roast-
ing pan or with a piece of heavy
duty aluminum foil crimped tight-
ly to the edges of the pan. Turn
the oven down to 325 degrees F.
to finish baking, allowing approxi-
mately the time indicated below.
