been told rather than things I actually remember.

We didn’t have a television, in fact, I never
saw a TV until several years later in Snyder
when our neighbors invited us over to watch the
Ed Sullivan Show on a dim, round tube set in
a big wooden cabinet. I’m not sure if we had a
radio, either, and if we did, I don’t know if regu-
lar weather forecasts were available. Dad was
our weatherman, standing out in the yard and
watching the clouds if he felt a storm coming on.
There must have been lots of threatening clouds
because he seemed to spend a lot of time out
there.
I don’t remember any storms, but I remember
one night, I woke up when Dad lifted me out of
bed. The electricity must have gone off, because
Mom was holding a coal oil lamp. I’m sure my
brother Jim was hovering somewhere in the back-
ground, but the only other thing I remember was
being carried down the steps into the cellar. I had
never been in there, probably because it was in
Miss Johnnie’s yard, so I was probably curious
to see what was in there. Not much as I recall
had a cellar. The shallow Texas bedrock makes
the cost of digging prohibitive. But the conversa-
tion brought back memories of my very early
days in West Texas.
I was bom in a tiny town about 20 miles west
of Abilene called Merkel. We moved from there
to Snyder, about 50 miles further west, just shy

1/4 c. extra-virgin olive oil
3 cloves garlic, minced
1 small onion, sliced thin
salt and pepper
4 tilapia fish fillets
1 tsp. dried thyme
1 lemon, sliced thin
Preheat the oven to 450 degrees. Toss potatoes,
garlic and onion with half the olive oil and lightly
season with salt and pepper. Microwave for 8 min-
utes, stirring halfway through the process.
Layer the potato mixture in a 9x13-inch baking
dish. Lay fish fillets on top of the potato mixture
and drizzle with remaining olive oil. Season with
dried thyme, a little salt and pepper. Place lemon
slices on the fillets. Bake for about 15 minutes
until the fish flakes easily with a fork or is 140
degrees.
Serve with a green vegetable and fresh salad.
That dinner was excellent. I’m so proud of him.
When I married him 35 years ago, the list of things
he wouldn’t eat was long: mushrooms, unpro-
cessed fish, Brussels sprouts, broccoli, etc. While
he eats those now, he still doesn’t like eggplant,
chickpeas, sweet potatoes, fennel, lamb ... the list
is smaller than it used to be. Hopefully we’ll have
another 35 years to whittle away at it.

Sales tax is the largest source of state funding
for the state budget, accounting for 57 percent of
all tax collections, according to the comptroller’s

- Motor vehicle sales and rentals, $427.3 mil-
lion, up 7.9 percent from December 2018;
- Motor fuel, $310.7 million, down 1.1 percent

down 33.8 percent from December 2018; and
- Oil production, $362.5 million, up 18.3 per-
cent from December 2018.

Texas Comptroller Glenn Hegar on January 3
reported that state sales tax revenue totaled $3.01
billion in the month of December, 4.8 percent
more than the amount reported for December
2018.
“Growth in state sales tax revenue was led
by receipts from the construction, information
services and restaurant sectors,” Hegar said in a
news release. “While revenue growth was slightly
buoyed by collections from remote sellers and
online marketplace providers, collections from
retail trade were depressed due to significantly
fewer Christmas shopping days in November this
year compared to the previous year.”

Ag chief hosts show
Texas Agriculture Commissioner Sid Miller in
mid-December announced he would host a new
weekly television show to premiere on the RFD-
TV network. The first show is set to air on January
21.
The show, Texas Agriculture Matters, will
spotlight Texas agriculture for 52 million viewers
nationwide, according to Miller’s office. The show
is produced by RFD-TV in agreement with the
Texas Department of Agriculture and recorded at
the RFD-TV/The Cowboy Channel studio in the
Fort Worth Stockyards, with Miller hosting in his
capacity as Texas agriculture commissioner and
receiving no compensation for his participation.

The most recent flu surveillance report shows
widespread flu activity in Texas and high levels
of influenza-like illness. There have been eight
pediatric flu-related deaths reported in the 2019-
2020 flu season.
Influenza is a contagious respiratory illness
caused by one of a number of related viruses.
The flu vaccine is made up of strains similar to
ones likely to be circulating in North America,
and vaccination is especially important for
people with chronic health conditions and weaker
immune systems and their caregivers, the DSHS
said.

was about 20. Entry into the hidden shelter had
to be made by crawling on hands and knees,
and once inside, everyone had to sit shoulder to
shoulder. Like our storm on Friday night and the
storm in Merkel, the feared danger never materi-
alized for Dirk’s family and friends, and he said
he was really glad to get out of that hole.

and energy worrying about bad things that never
come to pass. However, it’s always good to be
prepared. And it’s always good to remember and
rely on the greatest shelter of all.

cerned about my diet, my husband not so much

reading labels, comparing calories and grams of
protein. He talks about sodium and healthy carbs
- super unusual.
I realized that this year might be different
when I came home from working at the Leader
one evening last week. David was consulting The
Complete Mediterranean Cookbook and pulling
together a fabulously healthy dinner. Like I would
have done, he modified the recipe substituting the
ingredients in it for what we actually had on hand
and adding some others that would improve the
dish.
Perhaps with David on board, willing to eat
healthier too, we’ll be able to stick with a healthier
diet.

Toll hike takes effect
The Texas Department of Transportation’s
(TxDOT) annual toll rate increase took effect
January 1.
According to TxDOT, the biggest increase will
be felt by drivers who still pay by mail, as the
surcharge for those transactions will increase to
50 percent of the base rate paid by all toll users.
Motorists with a TxTag account will experience
an even larger comparative discount on tolls - a
discount of 33 percent compared to Pay By Mail
rates, the agency said in a late-December news
release.
The 50 percent surcharge for Pay By Mail
transactions helps defray the rising administra-
tive costs associated with those mailed payments,
such as viewing license plate images, generating
and mailing invoices and processing payments.
Raising the surcharge to 50 percent also brings
TxDOT Pay By Mail rates in line with other toll
authorities in Austin and Dallas and across the
country, and further incentivizes having a TxTag
account.
