CREAMY CHICKEN ENCHILADAS
1 small onion, chopped
1 can (10 % oz) reduced fat, reduced sodium condensed
cream of chicken soup
1 can (10 oz) Rotel tomatoes
1 cup fat free sour cream
1 cup (4 oz) shredded reduced fat cheddar cheese
1 cup (4 oz) shredded part skim mozzarella cheese,
6-8 fat free flour tortillas
Diced cooked chicken breasts (1 pkg)

Garnishes: whipped cream, lime slices
Mix all ingredients and cook on stove top until thick.
Pour in baked pie shell. Beat egg whites and a little
sugar and put on top of filling. Bake until golden.

KEY LIME PIE
3 large egg yolks
% cup Key lime juice
1 (14 oz.) can sweetened condensed milk
% teaspoon vanilla extract
Pinch of salt
1 (9 inch) graham cracker crust
Garnishes: whipped cream, lime slices
Whisk egg yolks until blended; whisk in Key lime
juice. Add condensed milk, vanilla, and salt, whisking
until blended. Pour mixture into crust. Bake at 350
degrees for 15 minutes.
Remove from oven; cool completely on a wire rack.
Chill until ready to serve. Garnish if desired. Makes
8 servings.

Brown & drain hamburger meat. Add soup and cut up
Velveeta cheese. Stir until cheese is melted (over low
heat). Place meat mixture into casserole dish, then on
top of that layer with Tator Tots. Sprinkle with cheddar
cheese. Cook at 350 degrees until Tator tots are done.
Serve with biscuits.

1 pkg white almond bark
1 cup pecans chopped
1 %2 to 2 cups Froot Loops cereal
Melt almond bark. Add Fruit Loops and pecans. Drop
immediately by spoonfuls onto wax paper.

LIGHT LEMON CAKE
1 pkg yellow cake mix 3 egg whites
1 % cups water
1 pkg (3.4 oz) instant lemon pudding
1 pkg (1 oz) instant sugar-free vanilla pudding mix
1 (8 oz) frozen light whipped topping, thawed
% cup cold skim milk % tsp lemon extract
In a mixing bowl, combine dry cake mix, lemon
pudding mix, water and egg whites. Beat on low
speed for 1 minute. Pour into a 13x9x2” baking pan
coated with nonstick spray. Bake at 350 degrees for
23-28 minutes or until a toothpick inserted near the
center come out clean. Cool. In a mixing bowl,
combine milk, lemon extract & vanilla pudding mix.
Beat on low for 2 minutes. Fold in whipped topping.
Spread over cake. Store in refrigerator.
