cheese but it’s still one of the
most popular food items on many
menus.
It comes in easy-to-take-home
cartons which require very little
storage space in the refrigerator.
And it’s easy to serve.
Best of all it’s plentiful, accord-
ing to Production and Marketing
Administration. It should con-
tinue plentiful.
Cottage cheese ranks alongside
meat in protein, the body build-
ing material, which means it can
be substained for lean meat in
the menu. Mineral contents dif-
fer, however. For instance, cot-
tage cheese has more calcium*
than meat but not as much iron.1
Cottage cheese also contains'
phosphorus and ribo-flavin.
Many homemakers like to
serve cottage cheese plain with
salt and pepper to taste. Others
