part of our holiday eating pattern. Home kitchens and bakeries

lands during this season of good food.
From Norway comes this recipe for Jule Kaga, a Christmas
bread laden with citron, raisins, almonds, and flavored with
cardamom. Made with enriched flour, which contains three B-
vitamins and food iron, the bread offers a nutrition bonus as well
as eating enjoyment.

2 packages yeast, compressed 6'/a cu

ening, and cool to lukewarm. Add 2 cups (lour and mix well. Add
softened yeast and e^gs and boat well. Stir in cardamom, citron,
raisins and almonds. Add enough inoro flour to make a soft
dough. Turn out on lightly floured board or pastry cloth and
knead until smooth and satiny. Place in greased bowl. Cover and
let rise in warm place until doubled (about 2 hours). When light,
punch down and divide into 2 equal portions. Let rest 10 minutes.

4V4 X 8V4 inches. Let rise until doubled (aln>ut l'i hours). Bake
in moderately hot oven (400 F ) 10 minutes Reduce heat to
moderate (350 "F.) and bake about 45 minutes longer. When
cool, front with confectioner's sugar icing, if dtwired.
Makes 2 loaves.
