Deer hunters are urged by
the Parks and Wildlife Depart-
ment to be sure their deer
reaches the table in top condi-
tion.
Field care and proper storage
are essential, said E A. Walker,
assistant director for wildlife.
Often hunters are so enthusias-
tic about the thrill and excite-
ment of the hunt they neglect
the meat.
“Now is the time to plan
ahead to be sure you know what
to do after the shot," said Wal-
ker.
Recommended equipment for
the deer hunter includes a
sharp, suitable knife, a length
of rope for hanging the deer,
some string or a rubber band to
attach your license tag, and a
good supply of salt if you plan
to keep the hide for leather.
Immediate' field dressing of
deer right where it falls is very
important to protect the flavor
of the meat. Not only will this
keep gastric juices from get-
ting into the meat but it will
, allow the carcass to cool faster.
Temperature of venison is
very critical. It should never be
hung in direct sunshine and it
should be placed in refrigera-
tion as soon as possible, espec-

“The 68,000 state employees

Parboiling strong game will
reduce any objectionable flavor,
point out the specialists. This
will produce a mild gamey flav-
or; however, some soluble nut-
rients from well-conditioned
carcasses will be removed.
Many people prefer to mar-
inate meat from more mature
animals to reduce gamey flavor
and make the meat more ten-
der, report the specialists. A
marinade is made by combining
one-fourth part vinegar, three-
fourths part water, sugar and
seasoning. Meat should be plac-
ed in the solution and refriger-
ated for 72 hours or longer. -

it, Reeves said you should re-

machines that are left outside.
The last step is to make a list
of needed repair parts and order !

7. If the motor has a clutch,
depress the pedal and fasten it
to keep the flywheeel from
sticking to the clutch plate.
8. Store the battery in a cool I

to make it discharge faster.

with additional fat may be nec-

Old and less tender game, on
the other hand, is best prepared
by moist heat such as braising,
stewing and simmering. Swiss
steaks and pot roasts should be
braised, and a small amount of
liquid should be added to meat

by our integrity.”
Petry praised the 25.000-
member TPEA for its work in
state employee relations.
"This is not a thing which
may be controlled by any organ-
ized police force. It is basically
a matter of self-policing from
the bottom to the top of the en-
tire state employee complex,
and each department within it,”
he said. “Organizations such as
the TPEA do a tremendous job
in instilling pride in public ser-
vice among its membership. I
submit that where Integrity is
lacking, there can be no pride.”
Petry said:
“We live in a cynical time.
But there is no room for cyni-
cism where the respect of our
employer is concerned. Let us
never forget that our employer
is the people.
“With hardly an exception,
the record of public service in
Texas has been one of honesty,
integrity and efficiency. There
can be no finer program of pub-
lic relations for each of us as
individuals, or for all of us col-
lectively as public employees.
