one-act plays that com-
prise a portion of the high
school’s upcoming theater
program, so Duncan came
on board to direct “Little

After a quick three-month
build, Panda Express is
open for business and serv-
ing Elginites American
Chinese cuisine.
Manager Daniela Cejesus
said the first day of business
for the restaurant was Dec.
31.
“The first couple of days
we were really slow, be-
cause nobody knew we
were open. Right now,
it’s picked up a lot more,”
Cejesus said.
The menu includes appe-
tizers such as potstickers
and egg rolls, and a dozen
entrees, including the cus-
tomer favorite Orange
Chicken.
“You can choose your
sides, we have rice, noo-
dles. We have a lot of
chicken dishes,” Cejesus
said.
A seasonal dish currently
on the menu is the Fire-
cracker Chicken, in cele-
bration of the Chinese New
Year.
“Our Firecracker Chicken
is really good. It’s got pine-
apple and it’s a little spicy.
It’s similar to the orange
chicken, just with a little
more stuff in it,” Cejesus
explained.
All sauces used in dishes
are made fresh in house
using only fresh ingredi-
ents.
“We make all of our
sauces from scratch with
fresh vegetables. We don’t
use anything pre-made or
anything like that,” Ceje-
sus said. “I think that’s
something we try and bring
awareness about to people.”
The Elgin location is
corporately-owned and
looking to capitalize on
projected growth in the
area.
“Panda Express is always
looking to go out and Elgin
is growing, so I think that’s
one of the main things that
brought Panda Express
to Elgin,” Cejesus said.
“That’s what really brought
us over here, was Elgin was
growing and they felt like
there was a lot of potential

on late-night television in
the 1960’s. It was remade
into a feature film starring
Rick Moraines in 1986
and then into a Broadway
hit in 2003.
