Jalapeno Cornbread
by Nelda Screws
1 cup com meal
2 egg beaters or 2 egg whites
1/2 can (#2) cream style com
1 cup (8 oz.) Kraft Free cheese slices,
chopped
1/2 tsp. salt
1/4 cup flour
1/2 cup buttermilk
1/2 cup liquid Butter Buds
1 can Rotel tomatoes and green chiles,
drained
1 1/2 tsp baking powder
Beat Egg Beaters (or egg whites)
and add remaining ingredients, mixing
well. Pour into a large cast iron skillet,
that has been sprayed with a non-fat
cooking spray. Bake 50 to 60 minutes
at 350 degrees.
Chicken Enchiladas
1 medium chopped onion
1 (4 oz.) can chopped green chiles
1 (14 oz.) size chicken broth
I Tbs. cornstarch
1 Tbs. flour
3 Tbs. liquid Butter Buds
1 tsp. minced garlic (in ajar)
2 cups cooked cubed white meat
chicken (without skin)
12 flour tortillas
16 oz. Kraft Free cheese slices cut in
strips
1 can Hunts stewed tomatoes (14 1/2
oz) drained
1 can Hot Jalapeno Relish (Old El
Paso) 7 1/2 oz. size, drained
2 cups Fat Free Sour Cream
Combine liquid Butter Buds, garlic,
and onion in a sauce pan. Cook until
soft. Add flour, cornstarch, chicken
broth, and green chiles. Stir with a wire
whisk until bubbly and smooth. Add
flour mixed with water if a thicker
sauce is desired. Add seasonings and
cooked chicken. Remove from heat.
Combine stewed tomatoes, jalapeno
relish, two cups of fat free sour cream,
and 1/ 2 of the cheese together in a

In a large bowl, combine both sauces
together. Makeyourenchiladas by spoon-
ing chicken sauce mixture onto each
flair tortilla. Next roll them up and place
in a casserole dish that has been sprayed
with a non fat cooling spray, with the
seam side down. Pour the rest of the
chicken sauce over the rolled up tortillas.
Sprinkle remaining cheese on top. Heat in
a350degreeoven about 15-20 minutes or
until hot and bubbly.
Carrot Cake with Vanilla Sauce
Cake;
1 1/2 cups liquid Butter Buds
1 cup sugar
1 cup brown sugar
4 Egg Beaters or 4 egg whites
3 cups self-rising flour
2 tsp cinnamon
1/2 tsp. nutmeg d
1/4 tsp ground cloves ‘ •r
1 small can crushed pineapple
2 tsp. vanilla
3 cups grated carrots
1 cup raisins
1 cup Grape Nuts Cereal
Sauce;
1 cup liquid Butter Buds
2/3 cup sugar
2-3 Tbs. cornstarch
1 Tbs. vanilla
Cream together Butter buds, sugars,
Egg Beaters or Egg Whites, pineapple
and vanilla. Add raisins and Grape Nuts.
Add flour and spices. Fold in grated car-
rots. Pour into bundt pan sprayed with
non fat cooking spray. Bake at 350 de-
grees for one hour.
While the cake is baking, combine all
the sauce ingredients in a pan and cook
on the stove. Bring to a boil, stirring oc- m
casionally. Bring to a full boil and stir foD
1 minute. Remove from heat. Aftercake"
is baked, cool upright in pan for 5 min-
utes. Remove from pan. Pour 1/3 of the
sauce over the cake and save the rest to be
served with the cake. If sauce is lumpy,
use a hand mixer and beat until smooth.
If the sauce is too thin, add a little more
com starch.
