1 cup chopped cilantro
2 cups diced tomatoes
6 green onions with tops, diced
1 fresh mango, peeled and diced
1 tablespoon oil
Juice of 2 limes
1/4 cup pecan pieces
1 large fresh jalapeno, seeded and
diced
Combine bell pepper, cilantro,
tomatoes, onions, mango, oil, lime
juice, pecans and jalapeno in a large
bowl; mix well.
Preparation time: 30 minutes
Cooking time: 12-14 minutes
Marinating time: 30 minutes

GRILLED RIBEYES
WITH MANGO SALSA
2 ribeye steaks, 8 ounces each
1/2 cup pineapple juice
1/4 cup soy sauce
1/4 cup Worcestershire sauce
1/4 cup lime juice
1/4 cup oil
2 cloves garlic, crushed
1 tablespoon chili powder
vegetable cooking spray
Mango Salsa*
Mix ingredients and pour over
steak. Marinate 30 minutes. While
steak is marinating, prepare salsa.
Spray non-stick pan with vegetable
cooking spray and pan fry steaks 6
to 7 minutes or to desired doneness,
turning once. Serve Mango Salsa
over steak. 4 servings.

Band At San Marcos In Free Concert
The Texas Apple Growers
Conference will be June 27-28 at the
Bandera Electric Co-op in Bandera.
The conference begins with
registration at 8:30 a.m., with the
main program beginning at 9:10.
The first day’s program includes
discussions on site selection and
preparation; irrigation systems,
supplies and installation; root-
stocks, varieties and tree spacing;
how and when to plant apple trees;
trellises and fencing designs; soil
and foliage analysis; fertilization;
insect and weed control; training
and pruning apple trees; thinning
fruit; processing and thandling of
apples; and marketing.

The program will feature light
classical fare, a tribute to George
Gershwin and movie and theatre
theme songs. Also, the “Overture to
Candid,” Die Fledermaus" and
“Italian Polka” will be interspersed
with “Spirit of Texas.”
Picnic suppers, lawn chairs or
blankets are recommended. In the
event of inclement weather, the
show will move indoors to the San
Marcos High School auditorium.
