The Otero Cowbelles met Feb-
ruary 6, 1992 at the Western
Sizzlin Restaurant in Alamorgor-
do. Yvonne Oliver was the hos-
tess.
The meeting was called to or-
der at 10:35 AM by President
Betty Stoots. Twenty-four mem-
bers were present.
The Cowbelles have received
an invitation from the Lea
County Cactus Cowbelles to
attend the district workshop
meeting in Hobbs on March 13.
State President Barbara Wagner
encouraged all members to at-
tend the district workshop near-
est them. March 12 is the Dist-
rict V workshop in Carrizozo.
Shirley Trezise' gave the Trea-
surer's Report and Kathy Jones
presented the Audit Report.

Jamison has distributed the ads
and applications.

Townsend, National Beef Cook-
off Chairman, attended the Am-
erican National Cattlewomen's
Convention which was held Jan-
uary 23 in San Diego - in all six
New Mexico members attended.
The Legislative Reception Re-
port was given by Barbara -

thickened cream, can with-
stand high temperatures without
se parating or curdling partly
because of the high fat content.
Unfortunately, there isn’t a heat-
tolerant substitute. Such pro-
ducts as yogurt and low-fat sour
cream have higher percentages
of water and don’t keep their
texture when heated.
Q. Can white and yellow corn-
meal be substituted for each

A. Yes, The colors differ de-
pending on the variety of corn.
Both are fine for breads and muf-
fins.

Yesterday I went to the grocery store for the first time in two
years. Before you call me a chauvinistic bigot, let me hasten
to say that the reason I didn’t go to the grocery store is not be-
cause I think going to the grocery store is a womanly thing to do.
The reason I don’t go to the grocery store is because I’m a cow-
ard. My last grocery store visit occurred when the ice storm of
January 1990 forced me to make a heroic shopping trip for eleven
items. I got lost looking for the beans with chili and spent two
hours and fifty-eight minutes wandering around the aisles before
being rescued by a matronly woman who turned out to be Presi-
dent of the local chapter of the Society For Being Kind To Lost
Grocery Store Patrons, I was so shaken by the experience that
I swore I would never go back.
My wife Vicki’s recent emergency request forced me to break
my resolve. Discovering that we were out of some items for a
breakfast engagement, I told Vicki lovingly (and it is an ex-
tremely loving act to face the terrors of the grocery store) that
I would purchase them for her. Thankfully the early morning
hour made me one of the few customers and I wasn’t rushed.
For the first time I really looked around the grocery store.
The immediate feeling that struck me was one of awe. I
was astounded by the abundance found in the grocery store.
Made brave by the lack of customers I wandered around a bit,
marveling at all the sights and smells. There were aisles and
aisles of neatly stacked food and products. There was a huge deli
with all sorts of delicious looking selections and a wonderful
bakery with unbelievable aromas and sights. The produce de-
partment had rows and rows of fresh fruit and vegetables. The
meat counter contained an unbelievable number of selections
— and on and on. What a marvelous place, the grocery store is!
When I left the store Iwas overcome by a thought. Those who
visit the grocery regularly don’t notice the abundance found there.
Likewise, most of us, used to ourselves, don’t know the abundant
talent that lies within us. To carry the analogy a step further,
let’s say that you were a real winner in the Publisher’s Clearing
House Sweepstakes. You had truly won $1, 000, 000 and the enve-
lope declaring you the winner was sitting in your mailbox but you
never opened your mailbox. You would be a millionaire but you
wouldn’t know it.
Now most of us have a million dollars worth of talent and a
million dollars worth of opportunities but we don’t realize our
potential, just as most of us don’t realize the abundance found
in the grocery store. All we have to do to tap into our internal
abundance is to realize our potential and begin cultivating our
talents and opportunities. Each of us has a million dollars with-
in us, all we have to do is open our mailbox. The next time you
visit the grocery store, take time to look around and remember
your $1, 000, 000 potential.

A. The answer is yes to whole
milk and half-and-half and no
for heavy cream. In place of
half-and-half, use evaporated
milk at full strength. Evapo-
rated milk doesn’t substitute
well for he avy cream because it
has a lower fat content and
won’t give the same result in
most recipes.
Q. Can I determine freshness
by floating an egg in water?

A. No, this isn’t a reliable test.
We recommend keeping eggs
for no more than a week or ten
days for best quality and max-
imum freshness. However, un-
cooked eggs are safe to use for
at least four to five weeks beyond
the date they were packed.

Ft. Davis, (Sat. night, Feb.
8), Fran Hedrick of Knicker-
bocker Texas, won in the
poetry contest. Fran’s son-in-
law, Eddie Hill, played for
the dance. Fern Prather,
Eddie’s grandmother, Bonnie
Prather, Eddie’s mother, Vir-
ginia Hill, Eddie’s sister and
her son, Zachary were all there
for the program and enjoyed it
very much.

Larry Henderson, Superinten-
dent of the Guadalupe Moun-
tain National Park came by
Thursday (13) afternoon, and
we enjoyed a good visit.

When I stopped at Jerry Ziler’s
(Sat. 15) Jerry was fixing to
disc up the garden. All the
Zilers, Judge Doyle and Lois,
Jerry and Lynda are great
gardners, and they take plea-
sure in seeing how many vege-
tables they can give away.
This reminds me that it is
time to order some onion sets.
