Dip the fish steaks in flour and salt which have been mixed
together Heat olive oil in ekillet and brown fish steaks quickly on
both sides. Remove flab from ekillet and place in flat casserole. 4
Add onion and tomato to oil remaining in skillet and cook over
low heat for 5 minutes. Add bay leaf, 1 tablespoon water, 2 teaspoons
vinegar and pepper. Pour over fish in casserole.
To mahe garnish, mix garlic, almonds, egg yolks, 2 tablespoons
vinegar, 2 tablespoons water and M teaspoon salt to a thin paste.
Put a Bpoonful on top of the tomato sauce on each fish steak.
