crumbs (about 22 cookies)
1 package <3 ounces) cream
cheese (softened to room tem-
perature) •
V cup whipped cream
Wash and hull berries; drain
and pat dry on paper towel.
Slice enough berries to make 1
cup; set aside remaining whole
berries. In a small heavy sauce-
pan mix together thoroughly
the sugar, cornstarch and. salt;
stir in water, lemon juice and
food coloring.
Cook over moderate heat,
stirring constantly, until thick-
ened and clear; simmer 5 min-
utes. Add the cup of sliced ber-
ries and simmer fiye more
minutes, stirring occasionally;
chill.
In a small mixing bowl over
hot water cream margarine un-
til consistency of heavy cream;
stir in crumbs; press evenly on
bottom and sides of 8-inch pie
pan; bake in moderate (375 de-
grees) oven about 8 minutes;
cool.
With the back of a tablespoon
spread cream cheese over bot-
tom of crust; chill. Stir reserv-
ed berries into the chilled straw-
berry mixture; turn into shell;
spread with whipped cream;
chill several hours before serv-
ing Makes 6 to 8 servings.
