THEN the trend burst in unex-
' YY pectedly summer the
hostess must use a bit of magic to
feed them all on a meal planned
for just the family. The food just
has to go around, so here are some
tips. .
Chops or steaks will "stretch"
when cooked. If you cut them in
halves and cover them with cream
sauce or vegetables, or smother
them in tomato sauce and corn,
mixed. -----•
If you don't have enough
fresh vegetables for the salad
add a can of vegetables.
Since hot breads generally at-
tract attention, divert your
guests’ from the skimpiness of
a meal by whisking up‘a batch
of scones, raisin muffins, nut
gems or bran stick. Loads of hot
buttered biscuits with syrup,
honey or Jelly are grand tillers,
and you will have an opportun-
ity to make them.
Corn goes farther when cut
from the rob and blended with
a sauce. Use cut corn to top
broiled tomato slices, or mix it
in with scrambled eggs

Combine beef, onion, salt and
pepper and mix thoroughly. Cut
and toast buns (or bread) on
one side Butter untoasted side

each slice of bread or bun with
ground beef mixture, making
sure the edges are well covered
so they won't burn while the
meat is cooking. Arrange on
broiler rack, allowing three
inches between surface of meat
and source of heat. Broil five
. minutes.

TURKISH food is surpisingly

ed on skewers) is always popular
with Americans, and Turkish rice
and tomato recipes fit well into the
American home menu.
SHISH KEBAB
(Serves 4 to 6)
Two pounds lamb, 1 tablespoon 1
olive oil, salt and black pepper s
onion Juice, firm ripe tomatoes.
Cut lamb into squares about 1
1-2 Inches thick. Remove all excess
fat. Rub each lamb square with a |
little olive oil and sprinkle with
salt, black pepper and onion juice
Rub these seasonings Into the meat.
Stack lamb squares on a platter and
allow to stand for one hoar in a
cool place Cut tomatoes into large
squares, about the same thickness
On long iron skewers put alternate
squares of lamb and tomato. Then
broil, either over a charcoal fire or |
under broiler, turning frequently,
for about half an hour Do not
broil too fast. The outside should
not be overcooked while the in-
side is underdone. When ready, puji I
out skewers and serve
TURKISH RICE WITH
TOMATO JUICE
(Serves 6 to 8)
One cup raw rice, boiling water.
1-4 pound butter, 1 cup water. 1
1-2 cups tomato juice, salt.
Wash rice well. Cover rice with ’
boiling water. Stand for one hour
Then wash in cold water and drain
until the rice is quite dry again.
Mix 1 cup water with the 1 1-3
cups tomato juice. Turn into large
saucepan with the butter. Bring to
boil, then add rice and bring to
boil again. Lower flame and cook

One smoked tongue, water to cov-

onion slice.
Wash tongue. Cover by six inches
with cold water. Add the rest of the
ingredients. Cover and let simmer
for two hours—or until the tongue
is tender when tested with a fork.
Let cool slightly and carefully dis-
card all fibrous parts and the skin.
Cool and chill. Cut into thin slices

Eight cup cakes (or sponge ones),
2 cups- sliced peaches, 1-2 cup chop-
ped roasted peanuts, 1-2 cup gran-
ulated sugar, 1 1-2 cups whipped
cream, 1 teaspoon vanilla, 1-4 tea-
spoon almond extract.
Carefully cut off the tops of the
cakes and reserve them. Scoop out
the insides of each cake. (Reserve
the crumbs and use later in a cus-
tard or gelatin dessert.) Mix the
peaches with the peanuts and half
of the sugar. Chill. Fill the.cakes
with the peach mixture Replace
the tops and spread quickly with
the cream mixed with the remain-
ing sugar and extracts. Serve im-
mediately

One cake compressed yeast, 1-4
cup granulated sugar, 1 egg beat-
en; 1 cup warm water, 1-4 cup fat,
melted: 1 teaspoon salt, 1 teaspoon
cinnamon, 1-4 teaspoon cloves, 1
cup currants (washed); 1 teaspoon
grated orange rind, 4 cups flour.
Crumble the yeast in a bow. Add -
the sugar and after three minutes 1
add the egg, water, fat salt and
spices Mix thoroughly and add the
currants, rind and two cups of
flour Beat for two minutes. Blend
in the rest of the flour cover and
set in a room of moderate temper-
ature until the dough has doubled
in bulk. Tow It out and roll on a
floured board until it is half an
inch thick Cut out three-inch
circles. Spread each with soft but-
ter and fold half-over. Place a
quarter of an inch apart on a greas-
ed baking sheet or shallow pan.
Cover with a cloth and let rise un-
til doubled in size. (About 3 hours).
Bake 11 minutes in a moderate
oven. Serve warm with butter.
