not only a heating source, it was a great thing to remove stale
air, and bring in the fresh air from outside, and was also used
for certain cooking chores in wintertime.
The wood stove served for boiling the hog jowls and col-
lard greens, but the country boys and girls loved to bake sweet
potatoes in the hot ashes of the fireplace. These were some-
times wrapped in wet shucks but usually they were just covered
with embers. The ashes from the red oak and other hardwood left
a flavor in the yams that made them very palatable. And sausages
along with different cuts of meat were roasted on the ends of
forked sticks or long pieces of wire.
The fireplace with its jams and "throat" for control of
the up-draft was something that few men could build properly.
When not built right the winds sent the smoke back into the rooms
to suffocate the family or soil the linens. When properly con-
structed there was never any "backfire" from winds that sent
ashes or smoke into the home. Every community had its expert
chimney and fireplace builder.
The old time collard was best after frost and cold weather
had given it a quality no other "greens" could possibly have.
The cool weather gave them the rich blue-green color and in-
creased their sugar content. They went with hog jowl "like a
horse with a carriage"
If jowl was not handy, salt bacon in hunks was slit into
small portions. Each little bit left attached to the rind was
not only a decoration but a belt tightener that any hardworking
